dont need a sink. get 2 sm spray bottles. one for soapy water & one w clean water. simple...and you'll save a ton of water. could also nest your msr in the sm pot. silicone pot handler bungee across 4runner hatch works great for paper towels and dish towels. also, i find sm soft sided coolers are FANTASTIC for storing all your kitch gear and other stuff. they pack down much better than rigid boxes and if your cooler ever shits the bed, youve got alternatives
Back in my alpine climbing days, I had that same stove!!! It actually saved me once, on the side of a mountain. I was getting hypothermic, and needed to get some warm liquids in me. The stove refused to light. Come to find out, the leather pump cup had frozen and shrunk. I took it out, put it in my mouth, and quickly put it back on and the stove back together. Viola!!! I had a working stove again!!! Man, I miss that stove....
Stanley makes a camping french press, I highly recommend it. it isn't supper light but it is small and you can dual use it because it isn't glass. You can boil water right in it and have coffee in just a few min. Just bring a coarse ground coffee takes less than 10 min to make a fresh pot of barista quality coffee.
Plenty of stuff. I packed all my camping gear in the trunk of a 67 Camaro. 4x8 dome tent, couple blankets, no perishables, nothing that requires stove. All my fishing gear, and a self inflating mattress like yours. Done. If I want a hot coffee or hot food I’m usually close enough to civilization to make a quick trip.
Two of my best purchases for camping comfort are Klymit’s hybrid double air mattress and their packable pillows. The pillows have a reversible cover and straps to pack them down super small.
Great video guys! Just a note on the Oxo Pan, you can reverse the handle and clip it into the pan, so it’s attached but still inside the pan. Means you don’t have to worry about losing the handle nor it scratching the pan surface.
I remember seeing many come through the shop that had roof racks that attached to the drip rails. That might be an option for you if you can find one. It's nostalgic for me to see you enjoying the VW. I spent almost two decades driving bugs and working on them for a living. My second car ever was a '59 oval window which I promptly made into a Baja and put a 1968 cc, 92x74 stroker engine.
As to pillows, I picked up a "Vaverto small memory foam pillow", their "camping" size, last year and it's a huge improvement over the packable Thermarest pillows you show in the video. I'd used one of those for a few years and never really liked it, and the Vaverto is great. Packs up to smaller than the Thermarest.
Roof rack and a bigger water cooled motor. Dog bone pillow. I have several in my travel trailer and use them instead of regular size pillows, although they do take up some space.

I just picked up Coop pillows and so far we love them. They are also camping sized and pack down to 1/2 their size in compression bags.

You could always take one of the solid foam pillows and cut it in half with a hot wire and sew up a half pillow case.
