This looks sooo good. Even before I was WFPB I thought Panera was overpriced and overrated, so I am glad to have a home version of this that is oil free. Thank you! Another trick I learned from Cookie and Kate's website with soups is at the end to take 1 1/2 cups or so of soup out of the pot, puree it in the blender, and then add it back into the pot and stir. I do this with most of my soups now and I really like the combo of the creamy and chunky textures!
HCLF got me shredded in 2 months, I think I'd actually have to add a little bit of fat because of how lean I am getting by eating unlimited carbohydrates.. thanks for amazing recipes

I made this last week and was surprised about how much soup this recipe provides! I told my husband “we have enough leftovers for a week’s worth of lunches.” And you know what? It tasted even better as leftovers. We were thrilled eating this every day, and were disappointed when it was all gonel! So good.
Jill, I personally don't want to make it every week because its a TON of work to prep all the veggies, but Tim loves having it at work because all the stuff he needs is in this soup and he doesn't have to take lots of other containers. He gets his starches and non starches all in one shot if he takes a big enough portion. So, I make it every week for him. I love eating it but its a big commitment to have to prep for it. So, I am glad it makes so much so I don't have to do it every few days. HA! Even in 118 degrees here in Phoenix, I still make this every week. I've made this two times. It's the best soup I've ever had, better than Paneras. And it makes 6 quarts, plenty, and some to freeze. My family loves it. I skipped the barley and added lentils, so good.

This is great! It is a little spicy for me, but I put in the 1/4 t. of cayenne pepper. It makes a ton, but I got some Souper Cubes for freezing. Perfect. (I saw them on Nutmeg Notebook’s channel.).

Iris, I love the Olive Gardens Minestrone. I used to LOVE their Zuppa Tuscana but stopped eating it 14 years ago because I stopped eating animals. I know there are vegan versions of it but I have not tried to duplicate it yet. Thanks so much for watching.
I've not had it before as I've never been to Panera Bread. I've been sick for a few days. After watching this video this morning, I made a Fry's food order for the veggies that weren't in my fridge. I made the soup and think it's some of the best I've ever eaten. Even sick with little appetite, I've eaten two bowls full. Thanks. But...I should have only made 1/4 of the recipe. Okra would be a good addition to that soup. Also Publix offers what they call spring vegetable soup, delicious and satisfying. Next time you’re there pick some up from the deli....🤓
Did you say, what size pot you ended up with? It does look delish. Love Panera as it does have food I feel comfortable eating. Lifelong (75 yrs) vegetarian with a few yrs of no dairy. Which leads me to question. Why do you not use oil? My fiance mentioned the other day, he wants to cut out oil. His thing is coconut and palm oil. To me it adds a certain amount of satiety or completeness.(?)
Hi Kate. We used an 8qt pot at the end. It was amazing. You can cut the recipe in. half and use a 6qt pot though. As far as oil, Oil is higher in calories per pound than any other food. It's pure fat. There is nothing healthy about it. The fiber has been stripped from it so its just completely empty calories. Some oils are better than others because some are saturated or trans fat and some aren't. But, if you are trying to lose weight, oil is just empty calories. They add satiety or completeness because they are just fat. I have not ingested oil in over a year now. I don't miss it at all. The olives, coconuts, avocados, etc are fine to eat because you get the fiber with it so still eat those. We are doing The Starch Solution way of eating and its an oil free program. Yes, good point. I almost never use plastic for food storage. We have so much glass storage that we are well prepared. But, for the freezer, I am apprehensive to use glass, so it's the one play we use reusable plastic. Thanks so much for watching.
@@PlantBasedDads I think if you ever use glass in freezer, the thing to remember is to not fill the container full. It must have room to expand w/o breaking! :)
Lalylun, This should work in the IP if you sauté the hard veggies first. But, it has been my experience that soups do not taste as good in the IP, thats why I didnt do an IP recipe for this. My lentil veggie soup just doesn't taste as good in the IP and I think the same thing will happen to this soup. Let me know what your thoughts are if you make it in the IP. I am going to do a whole video on my moms trip. It was amazing and she's not a vegan. She is still not a vegan but she has changed alot from that trip. Cant wait to share it with everyone. You could do the soup own the IP, but my experience with soup in the IP is that it does NOT taste as good as on the cooktop. That being said, we made this soup again this week and just cooked it for the first 30 minutes and then threw in the spinach and called it a day. KJ, I wake up and I am like "What happened!!??" And I cant clean fruits and veggies with dirty dishes in the sink. And then Tim will say "Aren't you happy I have the dishes in the sink soaking for you? Didn't that help you out a lot?". Oh yeah, its like the walked themselves right into the dishwasher! NOT! The first roasted tomatoes do add a kick to the the soup. You can just use regular canned crushed tomatoes and not get the fire roasted, or you can use half fire roasted and half regular. You will still love the taste without the heat of the fire roasted. Thanks so much for watching, Kitty.
Based on the nutrition facts and ingredients (taking into account the natural fat content in those specific vegetables and grains) on the panera website (not your exact recipe) it seems to be about 1 tbsp of oil for every 20 BOWLS of soup. So it's pretty much oil free as is. But the amount sodium is insane. About half the daily AHA maximum allowance in a measly 60 calorie CUP.
Hi Phillip. Yes I talk about that in the video that its a very low calorie soup and its the best choice they have there at Panera. That was what give me the idea to duplicate it. I knew the oil didn't play a big part in the soup at the restaurant but I wanted it to be oil free for this channel since its an oil free channel. I doubt you monitor this video any more, but thought I would comment. First time I made this for a friend who loved the 10 veggie Panera soup…and was heart broken they discontinued it. I found your recipe and made it… it was the most healing and delicious thing, she said, for her chronic pancreatitis she had ever eaten! I decided to make again for her, but used different fire roasted tomatoes (Muir Glen). I am afraid that there was way too much “char” on those tomatoes… and made the whole thing bitter!!! I am so disappointed that this truly delicious but ingredient intensive soup was pretty much ruined (in my eyes, at least). I post this just for a cautionary tale for whomever may be looking this up. I will either use a different brand or regular tomatoes next time!
Hello Scotty, of course I monitor this channel and all its video. I have made this soup multiple times with every Muir Glen canned tomato that exists and never had that bitter taste. I am not wondering if your can of tomatoes was spoiled. I would never think to taste all the ingredients before i put them in so that could have easily happened to me too or anyone else. It sucks because that soup is a lot of ingredients to throw out. I would have been heartbroken also. I am so sorry to hear that.

I've made this two times. It's the best soup I've ever had, better than Paneras. And it makes 6 quarts, plenty, and some to freeze. My family loves it. I skipped the barley and added lentils, so good.

This is great! It is a little spicy for me, but I put in the 1/4 t. of cayenne pepper. It makes a ton, but I got some Souper Cubes for freezing. Perfect. (I saw them on Nutmeg Notebook’s channel.).

I've not had it before as I've never been to Panera Bread. I've been sick for a few days. After watching this video this morning, I made a Fry's food order for the veggies that weren't in my fridge. I made the soup and think it's some of the best I've ever eaten. Even sick with little appetite, I've eaten two bowls full. Thanks. But...I should have only made 1/4 of the recipe. Love Panera as it does have food I feel comfortable eating. Lifelong (75 yrs) vegetarian with a few yrs of no dairy.
Which leads me to question. Why do you not use oil? My fiance mentioned the other day, he wants to cut out oil. His thing is coconut and palm oil. To me it adds a certain amount of satiety or completeness.(?)
Hi Kate. We used an 8qt pot at the end. It was amazing. You can cut the recipe in. half and use a 6qt pot though. As far as oil, Oil is higher in calories per pound than any other food. It's pure fat. There is nothing healthy about it. The fiber has been stripped from it so its just completely empty calories. Some oils are better than others because some are saturated or trans fat and some aren't. But, if you are trying to lose weight, oil is just empty calories. They add satiety or completeness because they are just fat. I have not ingested oil in over a year now. I don't miss it at all. The olives, coconuts, avocados, etc are fine to eat because you get the fiber with it so still eat those. We are doing The Starch Solution way of eating and its an oil free program. Yes, good point. I almost never use plastic for food storage. We have so much glass storage that we are well prepared. But, for the freezer, I am apprehensive to use glass, so it's the one play we use reusable plastic. Thanks so much for watching.

Lalylun, This should work in the IP if you sauté the hard veggies first. But, it has been my experience that soups do not taste as good in the IP, thats why I didnt do an IP recipe for this. My lentil veggie soup just doesn't taste as good in the IP and I think the same thing will happen to this soup. Let me know what your thoughts are if you make it in the IP. I am going to do a whole video on my moms trip. It was amazing and she's not a vegan. She is still not a vegan but she has changed alot from that trip. Cant wait to share it with everyone. You could do the soup own the IP, but my experience with soup in the IP is that it does NOT taste as good as on the cooktop. That being said, we made this soup again this week and just cooked it for the first 30 minutes and then threw in the spinach and called it a day. It was really good and the veggies were cooked perfectly. I have already adjusted the directions in the description below the video. Thanks so much for watching.

KJ, I wake up and I am like "What happened!!??" And I cant clean fruits and veggies with dirty dishes in the sink. And then Tim will say "Aren't you happy I have the dishes in the sink soaking for you? Didn't that help you out a lot?". Oh yeah, its like the walked themselves right into the dishwasher! NOT! The first roasted tomatoes do add a kick to the the soup. You can just use regular canned crushed tomatoes and not get the fire roasted, or you can use half fire roasted and half regular. You will still love the taste without the heat of the fire roasted. Thanks so much for watching, Kitty.

Based on the nutrition facts and ingredients (taking into account the natural fat content in those specific vegetables and grains) on the panera website (not your exact recipe) it seems to be about 1 tbsp of oil for every 20 BOWLS of soup. So it's pretty much oil free as is. But the amount sodium is insane. About half the daily AHA maximum allowance in a measly 60 calorie CUP.
Hi Phillip. Yes I talk about that in the video that its a very low calorie soup and its the best choice they have there at Panera. That was what give me the idea to duplicate it. I knew the oil didn't play a big part in the soup at the restaurant but I wanted it to be oil free for this channel since its an oil free channel. I doubt you monitor this video any more, but thought I would comment. First time I made this for a friend who loved the 10 veggie Panera soup…and was heart broken they discontinued it. I found your recipe and made it… it was the most healing and delicious thing, she said, for her chronic pancreatitis she had ever eaten! I decided to make again for her, but used different fire roasted tomatoes (Muir Glen). I am afraid that there was way too much “char” on those tomatoes… and made the whole thing bitter!!! I am so disappointed that this truly delicious but ingredient intensive soup was pretty much ruined (in my eyes, at least). I post this just for a cautionary tale for whomever may be looking this up. I will either use a different brand or regular tomatoes next time!
Hello Scotty, of course I monitor this channel and all its video. I have made this soup multiple times with every Muir Glen canned tomato that exists and never had that bitter taste. I am not wondering if your can of tomatoes was spoiled. I would never think to taste all the ingredients before i put them in so that could have easily happened to me too or anyone else. It sucks because that soup is a lot of ingredients to throw out. I would have been heartbroken also. I am so sorry to hear that.
