I believe is compares quite closely to cheddar. I may not be the educated palate to do that kind of comparison though. I haven't had dairy cheddar cheese in about 6 years. It's true that our taste buds adapt to the plant-based diet. This cheese tastes very cheddar to me but to an omnivore it may not taste as close. From doing many grocery store tastings, I found people said it didn't taste exactly like cheddar to them but they thought it was very good cheese nonetheless.

I have tried other quick vegan cheeses that are not Fermented and find that the nutritional yeast overwhelms the taste and I realize that I am not crazy about the nutritional yeasty taste in the cheese 😏
There is a lot of "cheesy" flavor from the miso and from the rejuvelac. I daresay you could do without the nutritional yeast if you desire, at least cut back the amount. It's not essential to the composition of the cheese.
