    "add to a hot oven for an hour"... well I tried 190°c for an hour - might try 180°c next time, or cook for just 50 minutes at 190°. I added Leek - which made for a lovely succulent and sweet addition. Thoroughly enjoyed the textures and flavours. I loved teh simplicity and quickness of preparation for a fantastic end result. Winner, Winner, Chicken Dinner!!

    she salts after its baked with sea salt..so it adds crunch. Unpeeled onions add more flavor and color the chicken broth and garlic..unpeeled, turns into an almost sweet butter consistency. And..besides, she cant be bothered..lol

      Audra Hollis Plus, the more you add salt before the oven means you get watery vegetables and tough chicken, and peeled garlic burns quickly in the oven.

    Amazing. I love her. I was quite astonished at the pigs ear. In NZ we buy them in pets shops for puppies. I didn’t know humans ate them. They certainly don’t look appealing. 😂

    You always seemed so rushed and in a hurry when younger, but I think back, knowing that once you have seen a woman brought to tears trying to entertain and feed for a party!

    She doesn't look the same as before she did something to her face, look back at the older pictures of her she was absolutely beautiful.. PS: this is my opinion I have followed her shows, my husband and I adore her, but I stand by my opinion, she looks different... and not in a good way 🤷

      I agree with you. I used to watch her shows years ago and She was so naturally pretty, but for me the change is in her style. She used to smile as she explained what she was cooking, and she looked excited and passionate about it. She genuinely seemed to look forward to eating was she was making. I have seen a few recent videos and her smile is gone, she cooks, the food looks delicious but she looks like she is just going through the motions, no spark, no passion.

    Why she put the salt after cooking the chicken..why not put it before baking?

      I think probably because the salt will melt into the chicken and it's juices will run into the vegetables - making them salty too while the chicken may not be consistently salty as intended. If you add salt afterwards you can control the taste of everything in the pan.

      Because when you add salt on meat before cooking it draws out water from the meat making it dryer and therefore less tender and juicy

      Salt releases water from anything you're cooking. She's trying to roast the food, not braise it. If you put salt on the food beforehand, you get watery food.

      Ryan Lauderdale no you actually don’t. I just made roasted Brusselsprouts with olive oil garlic and lots of pink salt. It was still tender and juicy while crisp on the outside.

      She does the salt after cooking method in a lot of her dinner, I think she explains in previous videos that salting things, especially vegetables, before roasting makes them mushy and watery because salt draws out moisture. For the chicken salt can make the meat tough, but with the leg quarters she has there I don't think salting beforehand would make them dry...

    That's my type of cooking -- none! Lol. I can see how the chicken could taste bland based on the video, so I'd season with Herbs de Provence and plenty of salt before throwing the tin in the oven.

      She puts salt on it at the end, probably so that the salt doesn't release the water in the vegetables in the oven. If that happens, everything doesn't roast properly. Put pepper if you want.

      I don't think that's true. I put salt and pepper on the vegetables before I roast them and they come out fine. I can only imagine how bland the chicken and potatoes would taste without salt and if you salt everything at the end it just tastes salty instead of seasoned properly.

      She puts salt on it afterwards in order to make sure everything roasts properly without the salt releasing the liquid in the chicken and vegetables. Put pepper if you want.
