I added Leek - which made for a lovely succulent and sweet addition. Thoroughly enjoyed the textures and flavours. I loved teh simplicity and quickness of preparation for a fantastic end result. Winner, Winner, Chicken Dinner!!

She used to smile as she explained what she was cooking, and she looked excited and passionate about it. She genuinely seemed to look forward to eating was she was making. I have seen a few recent videos and her smile is gone, she cooks, the food looks delicious but she looks like she is just going through the motions, no spark, no passion.
I think probably because the salt will melt into the chicken and it's juices will run into the vegetables - making them salty too while the chicken may not be consistently salty as intended. If you add salt afterwards you can control the taste of everything in the pan.
Salt releases water from anything you're cooking. She's trying to roast the food, not braise it. If you put salt on the food beforehand, you get watery food.

For the chicken salt can make the meat tough, but with the leg quarters she has there I don't think salting beforehand would make them dry... Hope that helps!
