I would be interested in recipes that use whey. I have seen ricotta made but never attempted it. I have an instapot. Might try it. Instapot has changed many standard recipes in my kitchen. Will check out other videos in collaboration. Thanks to you and your mother in law.

I have milk coming out of my ears, both jerseys are a month fresh so I am getting 8 gallons a day😳 I have so much butter, yogurt, sour cream, cream cheese, kefir and mozzarella but ricotta would be another good addition esp since I have 2 kids that’s love pasta. This reminds me of making Scottish Crowdie cheese but that uses lemon juice or vinegar for the acid. How nice to get to cook with your mother in law. I keep some squares of muslin that has been hand washed with no soap to use instead of cheesecloth. Nice, reusable and there aren't any chemicals in it to worry about. Whoo hoo, calving season is almost here...lots of milk to come. Thanks for the easy recipe and method. My IP is much older than yours, I'll have to figure out the settings...I've never attempted ricotta. I used to make cottage cheese and sell it but that was a couple decades ago.

Yes, I have heard of using lemon juice or vinegar but my Mothernlaw claims for best results use the citric acid. She didn’t like the taste with the lemon juice. You can use the stove top to warm up your milk but I suggest putting the milk in a double boiler or a bowl on top a pot with water in it and keep stirring it.
Great video, LeAnne! How fun and easy this will be! I've never made it myself, but I'm feeling inspired. Of course, it's lovely in pasta dishes, but I also like to mix diced dried apricots and a bit of honey to ricotta. I like to put the ricotta mixture on toast, then top with chopped toasted almonds and a bit of cinnamon. I saw you must have gotten roses for Valentine's Day...beautiful! Yellow are my favorite, but those pink ones were gorgeous as well.

I don't own a instapot but this makes me want one.
I use my instant pot a few times a week.
I made sour cream the other day using heavy cream I had canned, it was so good, better than store bought! Can't wait to try this 👍

Oh no Jamie, you have to have a instant pot with the yogurt function. I even use that function to rise bread when it is cold!
