Simple kraut from garden to jar

  • I walk though how I make cabbage in sauerkraut by step by step. Chop the cabbage in to ribbon strips then weigh on scale, the multiply the total weight of cabbage by .02 to determine the salt needed.
    Bruise cabbage so it releases a lot of liquid. This is about a 2-5 minute process.
    When transferring into a tight container, include the liquid. Firmly press down so that the liquid covers the top of the product.

    Hey there! We are from Alberta, Canada, and I am chuckling about your sauerkraut harvest because I have been there, I hear ya with the machine cut cabbage. I prefer to hand cut my sauerkraut cabbage.
    We always say that cabbage math is hard and you need to follow basic math to make some amazing probiotics.

    Leanne , I make sauerkraut all the time. Very easy recipe. Slice your cabbage . I put mine in a clean sink. Run hot water over to make it limp. Pack into quart jars not too tight. Add 1T of salt, sugar, vinegar to each jar. Fill jar with water. Place lid and ruing on. Let set in a cool place for 2 was. Put in water bath for 30 min. Delicious.

    I use my gallon pickle jar to make Kraut and use a baggie filled with brine to weigh it down. Works great

    Ha, a beat down. That is funny. As a Christian I know we aren’t supposed to want to “take our frustrations out on others”…..but then there’s the human side. I can think of a few people I will have in mind. Ha, Ha. Great video and now you have inspired me to make kraut. This video made me laugh - you are quite funny.

      Oh you know it! Especially bushels of tomatoes and onions! Lol I had to begged my husband to buy a dump wagon for my lawn tractor. He finally gave in when I found one for $60 on Facebook market place!

    Awesome tutorial! I have been making lacto fermented sauerkraut for about a year now. I prefer the taste before 3 weeks of fermenting, do you think that’s a problem? Does it still have the beneficial bacteria I am desiring? ~Charlotte

      I’m sure it has some because that what I’m banking on… not as much as six weeks. It’s still better than taking a supplement pill.

    This was a fun video...I love your good arm workout. Kraut is so fun to make but you have to have people to help eat it, haha. I borrowed my mother's antique Red Wing crock and made a giant batch of kraut a few years ago. All went well until the last week and despite it being below the brine and well covered with a tea towel it went bad. That is the last time I've made a large batch. Since Mom is gone now I am the only one who will eat it so I am just going to have to work through the batch I canned a few years ago. Have you ever thought of trying Kimchi? It doesn't have to be scorching hot and is really delicious and useful in Asian dishes. Thank you for the fun and educational video, LeAnne!

      Yes, I wanna do Kimchi. Maybe when I get this going I will do it. I have some of the ingredients for it. We just ran out of what I canned in 17 and my lids were rusty! My MIL bought me a nice size crock for Christmas three years ago…. I made fermented pickled but they were so salty…

    Do you use food grade plastic bags in your crocks, or just plain crocks with lid?

      I tried plastic bags with marbles in last year with a lid and that was a fail. I don’t have a lid for my crock… I tried using cheesecloth.

    If garden critters eat at your fruits and veggies growing in the garden and don't die then it means it's it's safe for us to eat. Growing your own food without toxic pesticides or herbicides is the key to healthier life. So I totally agree

    I can not ferment sauerkraut in a crock it molds every time so I ferment sauerkraut in a mason jar I do quarts and pints

      I am now having better luck with Ball’s ferment kit. I still use half gallon ball jars and glass weights but not the pickle pipes.

    Pickle pipes are a real blessing for me but hadn’t thought of pushing the pounder down into jar for extra smooshing-what a great idea. Thank you so much! Aside from destroying so much nutrition during canning, raw sauerkraut just tastes so much better, so it’s good to get the word out. Enjoy your sense of humor. Gotta find that sauerkraut coleslaw recipe.
