    @sanjeevkapoorkhazana hey chef am newly married nd belong to a vegetarian family. however my husband is fully non-vegetarian... since he love eating nonveg so i started cooking non-vegetarian food and it was only possible because of u.... ur tricks and ideas worked. am grateful to u for posting ur cookin videos on youtube. it was for the first time tat i prepared mutton rogan josh and my husband just loved it so much... thanks a lot :-) next tym am gonna try mutton biryani. well thx again :-)

    Ive just made this rogan josh and it was the best curry I've ever made, i was impressed with the last curry i made that you showed me but this was the best by far, i went to the mad butcher in New Zealand got some mutton neck i did cook it for over an hour slowly instead of 25 minutes, and it come out so good, i also run the gravy through a sieve and it was so good, i just loved it and will do it again, I also made some chapatis to go with it too.

    I love rogan josh. Unfortunately, lamb or mutton are quite expensive and hard to get in my area so I usually have to replace the meat. Thank you so much for posting this!

    I have just made this dish having followed the recipe exactly apart from replacing the Kashmiri chilli powder, which was not available, with a mixture of 1 1/2 Tbsp paprika powder , 1/2 Tbsp hot chilli powder and a tiny pinch of red food colouring. The result was an outstanding dish with a beautiful colour and texture. I used a good cut of lamb and as it is a very expensive meat in my country (Germany) I was a little sceptical about using it in a new recipe. I need not have worried. Superb !

    Dear Mr. Harban Singh, Thank you for this recipe. Your recipes are so authentic and I enjoy watching your videos. I have tried so many recipes from books and UA-cam but they never come out right. Either the most important ingredient is left out otherwise too much of an unnecessary ingredient is added. Your Rogan Josh tastes exactly like the Rogan Josh I had at Taj Hotel in Bombay (now Mumbai} and that is what I was looking for. Cheers Kaycee.

    Chef Harpal, I take my hat off to you. I lived in Maharashtra and fell in love with mutton Kholapuri. Your recipe is SO delicious, and your demeanor so spontaneous; it brings back memories of life in India for me. I wish I can one day open a British-style (though I'm an anti-colonialist!) Indian take out here in California. I want to make this essentially Kashmiri dish you shared along with kormas, one weekly biriyani, vindaloo, Kholapuri mutton, some hard-core chicken tikka masala. We'll try to have a tandoor, and have some simple raitas, nans/kulcha /paratha, and hopefully even some rumali rotis and a classic pulao to go as sides. I'll let you know how things go...

    Harpalji!! I am a big fan of yours as you have helped me master tandoori chicken with a microwave. Your roganjosh..... I have tried differently and it was fantastic. Difference is, I used asafoetida first.... then no onions....... Also, I fried the mutton to a brownish colour and then made the gravy......

    Chef the rogan josh in ur style has turned out totally awsome..i made it today..Alahamdulillah i am quite a good cook and i know the basics too...ur recepie is grt and it may not be exactly as kashmir but it was very close to it..i made it in mustard oil and added asefodita in the oil...i lov most of ur recepies as they all taste grt aftr makin them....!!

    This recipe is so simple and the end result looks delicious!
    I love the method in which it is shown...easy and definitely worth a try.
    I have one question - if I were to strain the gravy and serve, would I blend it first(with the onions and spices) and then strain or just simply strain?

    Love it. The "authentic" recipe is not absolute, in my opinion. No matter where you go, the same recipe goes through variations. The one that you like is for you. Taste is never absolute. In terms of prep, I think this appeals to me more than the other with it's over chemical heat. But that's a matter of taste.

      Even though, it's still a crap recipe. His excuse is that it's a restaurant recipe. If that got served to me I would throw it on the floor and walk out. So much wrong with it I can't begin to say short of writting out an entire new recipe.

    Wow Mr Singh, it was the best rogan josh that I hv ever attempted in my life. I made sm variations though like marinating the mutton b4 with sm yogurt, asfoetida and fennel pwdr and then directly pouring sm while cooking. Also grated the onions instead of slicing them. And as I cant live without tomatoes I boiled peeled and puried them b4 dashing them in after the ygurt. Also with cilantro added asoori methi. But cudn't understand why you dint add ground cumin seeds which I did though?? Thanks:)

    I made this yesterday... it was very delicious.. Though the mutton was not soft by the end so I had to pressure cook it. But still came out quite well..thanks a lot for the recipe.

    how can u get mutton soft in 30 minutes? it needs to cook atleast 2 hours..also your gravy is to watery

    Can you explain whats the difference between Mutton Curry and Mutton Roganjosh? Also.....when I make mutton curry, before anything,I put 2 spoons of sugar on hot pan. As it melts, add Onions and it gives brownish tinge to onions, slight sweetishness to gravy & makes mutton very tender. Would you approve? Warm regards!

    Thank you so much, Chef Singh! I cooked this dish for a very special lady friend and she loved it. It was spicy and delicious... a taste that was fulfilling and sublime. The dish was a great success and I paired it with my own special Chicken Tikka Masala, homemade naan and basmati rice. The night was a great success. I will use this recipe often, again thank you for sharing this successful dish with us.

    I had the opportunity of working with one of the chef from Soaltee Oberoi Kathmandu for one year and the Mutton Rogan Josh prepared by you is far superior in taste than the one prepared by him and its my wife also who have noticed this. So Sadarjee tusi recipe cha gaye.

    Currently making this. The only thing I am doing differently is using a local dark beer instead of water. I hope it doesn't change anything too drastically but it's really only for the IP to get to pressure and the flavor of the beer is amazing (Gateway City Brewery #503 Dark Rye Lager); how can this fail? LOL Thanks for sharing the recipe and cooking instructions. So easy and fun to make. Nice to have a bottle of Chianti or Bordeaux to wash this glorious meal down.

    Asafoetida also known as Hing goes into this dish. I'm not sure if he used it. But as far as my knowledge goes, Hing is an integral part of this dish.

    @sanjeevkapoorkhazana I made it last night...it was really good!!! I just need to get some Kashmir chili powder...I used Chinese chili powder and its super hot and not as colorful as yours, but it turned out great anyways!

    Chef,the experience of Mutton Rogan josh was too great. I had never tasted such a tasty MRG before. Preparing this recipe, my wife made our sunday brunch special.We all enjoyed the recipe and my wife is very much confident to cook it back again.You are awesome and my wifes favourite chef.My family joins me to THANK YOU.

      Khan Arshiya actually kashmiri chilli powder is to give d rogan(colour).So if u don't want colour u can use or use half half of both chilli powders.
