    → Ingredients
    For the Dough:
    • 3 cups 00 flour
    • ½ teaspoon coarse salt
    • ½ cup cold unsalted butter
    • ½ cup cod lard
    • 2 to 4 tablespoons cold water
    For the Filling:
    • 7 large eggs
    • 1 pound ricotta, drained
    • 8 ounces provolone, cut into small cubes
    • 1 cup grated Pecorino Romano
    • 8 ounces ham, cut into small cubes
    • 8 ounces Napoli salami, cut into small cubes
    • coarse salt and fresh cracked pepper to taste

    I am very lactose intolerant but also very interested in trying this. Pray for me.

      there s very few lactose in good aged cheese,ofc if you have that condition is different,also try eating raw dairy,start with aged cheeses

    FYI if you’re ever out this way, all these ingredients are very available in Boston lots of cheese shops, lots and lots of Italian grocery grocery shops. I got salami with finochia in it called finochiona. Made with fennel pollen and pork. Also, Guan Chale is very easily found things like that that Scooch cheese is very easy to find as well.

      as you made the first cut of the pie and drew back your knife a small straight pin came out beside the knife blade
