Its called shortbread because the gluten strands in the cookie dough have been shortened by the butter. The fat coats the ends of the gluten strands and stops them from forming a gluten network. Think of how bread is chewy and soft, and cookies are hard and crumbly, because in bread there is nothing to stop the gluten from developing when you knead it, whereas there is butter in the cookie dough. So in short, it is called shortbread because it is like bread, but the gluten strands are shorter :)

It’s called shortbread because “short” is a word used to describe the gluten development. In a cookie like this, you want to develop as little gluten as possible, so the resulting texture is crumbly and breaks apart easy, whereas in a bread dough that you knead, you’re developing gluten so the end texture is elastic and soft, ie “long” gluten

I know this is a year old video but in case anyone is looking at this for holiday cooking RIGHT THIS SECOND: when making tie dye cookies, use colors next to each other on a color wheel. So, blue and purple. Or yellow and orange. If you start crossing over then you'll start getting combinations that look brown. General rule is don't mix two complimentary colors but you can mix primary colors since that's how colors work.
And personally I've always had the best luck dipping in a bowl instead of just smearing a little bit of frosting on a plate. The way I've done it and it's worked is by making up the frosting (or glaze....?) and putting a bit in a bowl then swirling in some food coloring with a toothpick.

That chocolate chip cookie sounded a bit too crispy for my tastes. Maybe some citrus zest in the shortbread would have added some flavor without overpowering.

Shortbread isn’t meant to have much flavour, it’s a classic Scottish biscuit. It can’t be changed while staying shortbread 🤷‍♀️

Shortbread comes from how the excess of fat (the butter) shortens the gluten strands and creates that sandy texture. Old recipes of shortbread were a 2:1 ratio of butter to sugar. Modern recipes now often change the sugar to half regular granulated sugar and half confectioners sugar.

Short bread refers to the snap of the cookie. The word short is often used to describe something crisp and snappy in pastry making. Bread bc it has very similar ingredients to an enriched bread. Short bread is one of the first variations of cookies/biscuits, so it was referred to as a short (crispy) bread.

In the beginning of shortbread cookies any old bread was used to bake the cookies, so the bread was twice baked. Then over time baking the bread twice got replaced with butter, the “short” part of shortbread and now a traditional recipe for shortbread maintains popularity. Shortbread is an easy recipe it’s supposed to be simple. The recipe is 3,2,1 recipe meaning it’s a three ingredient recipe of equal ratios. 3 parts flour, 2 parts butter, and one part sugar.

  • @estherbjerga523

So, idk if anyone ever answered this, but shortbread is called short because of the texture the cookie has. A short dough has the butter mixed completely through the flour and gives it that crumbly, delicate feeling. You could compare this to something like a biscuit which would have larger chunks of butter throughout, so the dough gets slightly laminated and creates flakes, and on the opposite side of the spectrum is something like a croissant which is laminated all the way through and has layers.

Today I learned that I can't be a good baker because what I like in a cookie isn't what the good folks like. XD I saw that sugar cookie snap and went, "Noooo, that's supposed to be extra soft and chewy." That's my ideal cookie in EVERY scenario. If it snaps, it's closer to a cracker than a cookie for me.

Shortbread was originally more like a hardtack, made from left over biscuit dough in the 12th century. They added the sugar later on (16th century) to make the cookie we know now.
Hooray, that useless fact finally became useful! Thanks for all your hard work on these videos.

Shortbread is so named because of its crumbly texture (from an old meaning of the word short). The large amount of butter is what makes shortbread short: the term short, when applied to biscuits and pastry, means crumbly, like shortcrust pastry should be. It is the reason why the fat added to biscuits and pastries is called shortening.
