Decent starter build.
For taking your own ship, my suggestion would be to hang out on Kreet for a while. Explore a couple of landing areas and wait for a pirate ship to drop in. Even without the Wanted trait, you can still pick up Crimson Fleet Ghosts, Spacer Raccoons, or Ecliptic Bayonets. Rarely, you can get a Stiletto without a Class B reactor.
Tips:
1. Sometimes, a ship just takes off. Nothing you can do but keep hunting. Same if you try to board, and it says "Inaccessible."
2. If you stay and fight the ground forces, chances are the ship will take off. Sneak or sprint past them. The ground crew will not follow, leaving only the ship crew to deal with.
3. Save once you're in the pilot seat before taking off. Take off and land. Ship is yours.
4. With some measure of patience, you can repeat this process multiple times. If you are exploring, killing pirates, and surveying, you can even earn enough to register one or more of the ships. You will need to register them to sell or modify.
5. Taking ships this way means that you don't damage the ship during the process. You also don't need the Subsystem Targeting skill to do it, so any Background will do.

A couple of notes about your build. Since each of the weapons you installed use 3 power units, to fully power all 4 of your guns you'll need to put 12 power into that one weapon system. Anything less than that will cause them all to fire slower. In combat you also want your shield fully powered which will take another 3 units of power leaving only 1 for your engines making you pretty slow.
While you will gain another unit of reactor output if Vasco is assigned to your ship's crew, it might be better to run only 3 electron beams firing at a faster rate until you can find a better reactor.
Changing your fuel tank didn't improve your jump range since the limiting factor is now the grav drive.
It was a really good tutorial about how to use the ship editor. One thing that bears mentioning is that B and C class engines are slower than A class. (B's top out at 140 and C's top out at 130 so if you want speed, stick with A class engines)
Also, I really like what you did with the stilletto. I've got one of those in my collection that I've not bothered editing yet, but you've given me some good ideas.

thankful for videos like this, i went into the ship builder and got overwhelmed and never went back except to mess with my guns lmao
When building I don’t worry much about mobility because my ship is my base and I keep the crafting materials in cargo. What I lose in mobility I can make up for with beam turrets. Also getting good crew members can add to your ship’s effectiveness. I do try to get the best grav drives and reactors I can find so that I can travel farther.

I would also wager that the part descriptions could have been made better, too 😒 as well as some of the error warnings. I've read a few and was like, well, that wasn't helpful.

So better go Assault Ramp than Freight Ramp, because the Assault Ramp is usually in the front while the Freight Ramp is in the rear. Good to know!
Could you use only one engine module? Keeping the rest of the ship as small and light to be more agile and a harder to hit target?

You could take off 2 of the landing legs too and have 2 simectrical fuel tanks

19:15 You are losing a lot of mobility by carrying too much fuel. 400+ fuel is way more than you need and its very heavy. Just remove 1 of those 2 fuel tanks and you'll see a much better maneuverability.

I can’t seem to get the vortex mods to work. I dont like that the ships are limited to a small size.

Better reactors will give you more power to spend. There's also one of the tech skills that gives you a few more.
