    Made this last night! Very tasty but a bit oily. I just skimmed off enough to my liking. Also used coconut juice and found the soup on the sweeter side because of it. Used cut up chuck instead and noticed no big difference!

      Thank you for liking my recipe. Yes, the beef stew sometimes can be too oily and I skim off the oil on top too.

    Love this! I currently have a pot on the stove and it's cooking for the last 10 mins. This is my 2nd time using your recipe and it's delicious and simple. I add extra garlic and garlic powder and fresh cracked black pepper just cause I love those flavors. :P

      Oh also, do you have any suggestions on thickening the stew a little more? I like mines thin but my boyfriend like his a little thicker. I'm trying to meet in the middle lol.

      Jaclyn Nguyen You can use tapioca starch and mix with a little water in it and slowly add it in the stew. It's depend how thick you like.

    No need to cook for 2 hours. Get a pressure cooker and in 12 minutes, the beef will be tendered.

      Water, of course. You can sub with some beef or chicken broth. Or water and some bouillon cubes or flavor. I just put all water and it is fine too.

      I think you can use the slow cooker. Leave the carrots out until the meat is not chewy. Then put carrots in and cook until it's soft. I used the pressure cooker before and within 30 minutes it's ready to eat.

      with this it's pretty much impossible for it to be pink because the cut of meat is tough so it has to be cooked a minimum of 2 hours, plus the beef gives the stew more flavor. as a substitute you can use a more tender cut of meat and sear it separately with more garlic & lemon grass and add it in towards the end. to give the stew more beef flavor you could add beef broth as a substitute for the water.

      Davis Pham, YES, BY FAR. In this recipe, she actually uses the real ingredients used by native vietnamese to make the dish, NO SUBSTITUTIONS. it's important to use beef seasoning that specifically says "Bò Kho", i you get that authentic vietnamese taste, not some knockoff cheap american version. And if you can't find the ingredients in your local store, you can always buy it on eBay. So really you have no excuse not to make the real thing!

      I already have dozens of spices i combine to make hundreds of dishes, 2 or 3 extra ones are no big deal, Hundreds of different premixed paste mixtures however are horribly expensive, bulky and liable to rot before they get used up. Please tell us what's in these mixes.
