If you don’t have day old rice you can cook your rice early and let it cool down then lay it on parchment paper baking sheet and put it in the fridge

⁠@@kirito-mj5ndI think they always say use day old rice cause it’ll keep its shape better and won’t clump up but I made it with rice I cooked the day of, put cold water in it to cool it down and mine came out just fine, next time I’ll try it with older rice

You can also mix a few egg yolk in with your rice (after letting it sit out flat for about an hour or so) and you’ll get a fluffy (but not mushy!) bowl full of golden rice.
I’ve found it works well to help separate the grains and form a much more crispy result.
