Seasoned Louisiana Fried Chicken Gizzards with homemade dipping sauce

- New Orleans native Charlie Andrews demonstrates how to make Seasoned Louisiana style fried chicken gizzards. The gizzards are cleaned, tenderized, seasoned and marinated for 24 hours. They are then coated with a seasoned egg and all-purpose flour batter and fried in hot oil. A homemade dipping sauce is also made to compliment the Fried gizzards as well. This recipe calls for 2 to 4 servings and it is well seasoned and delicious. Hope you all will give this recipe a try.

Notes- Hit the chicken gizzards with the meat mallet really good. Same way if you were making chicken fried steak, you hit it with the meat mallet really well to tenderize it. Afterwards batter and fry it. Fry the chicken gizzards for 3 to 6 minutes. The lesser the frying time, the better. If you fry them for too long, they will be tough and chewy. Chicken gizzards does not take long to fry due to their small size. As soon as they float to the surface of the oil they are done. Make sure the temperature of the oil stays as a consistent 375 degrees before you fry a batch. Seasonings are also adjustable for all of the batters. You can add more or less. I really like that you used your hands to mix & coat your gizzards!
There are so many UA-camrs who seem afraid of chicken, meat and/or getting their hands dirty in the kitchen. They use gloves or a utensil to do the job. To me, that makes no sense, not unless there's a fast-acting, spicy hot seasoning being used. What amuses me is that those using a utensil usually end up stopping their video after they start stirring and skip to the part where the chicken or meat is nicely coated. When that happens, it makes me think, they cut the filming because using a utensil is inefficient and they used their hands!

Yes, make sure you use the mallet to tenderize them. Same way as if you were preparing a chicken fried steak. Also with the frying, fry for a short period of time between 3 to 6 minutes and go from there! Let me know how it turns out. Thanks!
