Hi... It seems some soda companies have versions of "Jamaican Ginger Beer", but traditional Jamaican Ginger Beer isn't fizzy. The tartar or chew stick helps to bring out the flavour of the ginger. Glad you enjoyed the recipe!

Chew stick is Liquorice, the natural yeasts in the bark of it and the liquorice help add to fermentation process. Great add on the rum. Thumbs up.

Ginger beer is the best beverage in the world... Love it to bits.. Old Jamaican is the best version. First time I tried it I thought it was sooo strong, since I was used to a mild Norwegian type. But the second time i tried it, I was prepared for the strong taste, and I thought it was wonderful.. That just goes to show that you need to taste things several times... I will definately try this recipe.. thank you so much for sharing.. I will keep watching Jamaican cooking, maybe I'll find something else I love also.
    Cheers from Norway

Nice recipe! Here in Costa Rica at the Caribbean coast we have a drink similar to this call "Agua de Sapo" but instead of brown sugar we use "tapa dulce" which is unrefined whole cane sugar (panela). I guess this beverage came to Costa Rica with the Jaimican immigrant workers during the 19th century.

+lclb1990 thanks for sharing this bit of information. Glad to know Jamaican culture is alive and well in Costa Rica.

You'll really love this recipe. You should be able to find cream of tartar in the spice aisle of your supermarket. You don't have to use it but it does help with the "fermenting" of the ginger beer

I love Ginger beer but it is so expensive. I usually end up buying them individually instead of the four pack. I never knew it was so simple to make at yourself. I always think everything taste better homemade. Thank you for sharing.

You need to put the sugar in BEFORE fermentation & for better results, bring to tepid warmth before fermentation & cover or preferably use a fermentation lock while fermenting. Ferment for 2-3 weeks, not overnight. Brewers yeast may also be used to aid fermentation. By this means the Ginger beer will produce its own alcohol - no need to add rum.
Filter & 'fine' before bottling, this removes the sediments & any remaining deposits of yeast (if used).

I even added some brazillian sugar rum to a cup last night and it makes the best cocktail... I can already see me making this for gatherings...

Thanks, I enjoy ginger beer, it's m favourite drink. I just made a gallon of ginger beer and two gallons of sorrell. I"m going to try this recipe next. I used more ginger than you did but didn't have the bite I was expecting. I think it may be the type of ginger I purchased at the Asian supermarket. Thanks for the recipe. Do you have a sorrell recipe. I don't have cream of tartar but I'm using 20 grains of rice to ferment each gallon. Wish me luck!!
