    My mother made her gingerbeer with chew stick and grated ginger and sugar water allow that to ferment then put line juice.

    From Sierra Leone. We share similar food style. Normally we add cloves to our ginger beer. You should try it.

      I do add few cloves and cinnamon stick . Put in the sun for a day. I do not sweeten it and real strong my favorite drink. I don't use rice

      The Jamaican method is different. Most ppl don't ferment theirs in that way anymore. This way is how she's been doing it for years.

    Question, I really LOVE ginger beer my question is a out the fermentation, can you explain in detail how to use the rice to ferment?

      I honestly never did it before. The rice is raw and added to the brew like Japanese saki. I didn't leave it in long enough I think however...

    Hi Yardie…..
    As a young child I was introduced to ginger beer by my grandmama. Her background on her parents side was from St. Kitts. She bought it from the wholesale beer & juice location in New York back in the 80’s. I am not sure if you are familiar with this one but it had a pirate on a brown bottle. At that time it was very good & strong. I tried this brand not too long ago it was extremely weak. The other day I tried a different brand. It was okay, but I was not impressed. I decided to learn how to prepare it homemade (along with Sorrell - if I am spelling it correctly). I would like to know if the ginger was boiled with the water along & with back of rice? Or was the water boiled first then added that on top of the ginger & bag of rice?

      THE GINGERIS PREPPED THEN THE BOILING WATER ADDED AND ALLOWED TO STEEP. THE RICE IS ADDED IN THE FINISHED PRODUCT AFTER IT'S COOLED.

    How long to let ferment? Only 1 day or can it go 2-3 days? Refrigerate or leave in cool place like the counter? I love your videos by the way!

      I left mines overnight. It can be longer but you run the risk of it becoming spoil. I would strain after a day or so... then refrigerate

      She blended the ginger and then added it to the pot of boiling water. The pot must be turned off so the ginger can steep overnight she also added her spices and rice package for the fermentation process

      I didn't allow mines to stay that long however some may want it in there for a longer time and this will cause the rice to ferment.

    I wish I had done this more with my great aunties in Anguilla. Because I spent all of my time in The States with my mother's mother here, I got that cooking down, but My two aunties back home would make ginger beer, candies, and all sorts of delicious foods up into their 80s. I got some recipes dictated from one of them (we actually called Anty), but now she and her sister are gone taking their recipes with them. You do a service~

      I just have a list of ingredients in the description box. It was a little difficult to get her to slow down for a detailed video. Plus lots of other people moving about in the house. I will however be doing my version of the same thing which will be super detailed.

      Ideally you put the rice in after the ginger beer is cooled and sweetened . The rice can stay in overnight until it ferments I honestly didn't leave mine in for too long I was scared I guess lol

    Question please. It's difficult to understand the actual steps if you're not familiar with the accent. Did she boil ALL of the ginger with the rice? Did she add the rice and ginger before or after boiling? Need clarification on the steps. Thanks.

      She added the rice to the already boiled and cooled ginger. It's her way of fermenting the liquid. I would look up simple fermenting videos to do it so as not get it wrong. You can modify the way it is done to suit your needs

      It's hard to determine from the video, I would start with a 1/4 lb ginger to 2 cups water. It also depends on how strong you want it to be. Less water more potent.

    coconut sugar is worst than white sugar the benefit is the mineral but sugar is sugar honey is sugar.stevia leaf raw might be better just dry it and grind .

      This wasn't a tutorial of such, my senior neighbor was making it and I grabbed the camera and filmed her. She have all the process locked in her memory so I didn't want to question her much.

    My recipe on Ginger Beer, are with dried powdered Ginger. Sugar syrup, Lemon juice and water. Shake.
    Beware dried ginger, are fire in you mount. No strain.

      Rice bredda, Raw uncooked rice is used for centuries to ferment liqueur. Japanese rice wine is a famous example. When you use it in the ginger beer it turns it into ginger wine!
