- Vacuum sealing is an effective way to preserve dry goods in storage. You are probably aware that you can vacuum seal foods in mason jars with a special attachment to your vacuum sealer. But did you know that you can quickly vacuum seal your canning jars in a freeze dryer?
In this video, we demonstrate how to vacuum seal dry goods in a mason jar with both a vacuum sealer and a home freeze dryer. We purchase our seeds in bulk and vacuum seal them in mason jars to extend the shelf life.

A few years ago, I had the Summer of Bugs infiltrate my Pasta in my Kitchen cupboards.
Now my FoodSaver lives full time out in the open on the Kitchen Counter. All Dry Goods are kept in glass jars, after what is needed for a meal used the jar is re-vaccumed sealed, again.
I vacuum seal in mason jars, vacuum seal bags and Mylar bags. I find that store bought meats last longer and don’t get freezer burn. I vacuum seal so many other food items and love that our food is preserved longer. I didn’t know about NOT using oxygen absorbers with nuts so thank you for the info!
You can still use the oxygen absorbers but the key is vacuum sealing the jars. Using absorbers without pulling a vacuum is what will NOT work.

I just got my food saver about 2 weeks ago , then ordered the jar sealers got then yesterday. Going to seal up jelly beans and some Oreo cookies in half pint jars. I'm excited. Thank you for sharing your tips and showing how its done.
I also have a brake bleeder I can use with the Mason jar lid sealers in case of power outages.
I thought I was the only one to use this idea. A hand brake bleeder totally works as a 2nd to seal jars w the attachment 🇺🇲👍🤘🇺🇲
Me, too. I use a break bleeder at home, and a vacuum sealer at a friend’s house in a nearby town.
What brand brake bleeders you use, harbor freight was junk.
I got mine from Harbor Freight. Just a step up from the cheapest, and it still works for me 3 yrs later.

My favorite way to store short term goods is in mason jars. Some vacuum sealed, but the high use ones (like pasta) I don't bother vacuum sealing since I'd be opening them once or twice a week.

I use the Foodsaver to vaccum seal the jars but I also use a break bleeder kit - its manual and a great back up if the Foodsaver breaks or the power goes out. The hose from the bleeder kit fits nicely into the caps -

Been using a chamber vacuum sealer for most all of our dry and wet frozen foods and it works great. Also use our FoodSaver vacuum sealer with the attachments you've shown and it works very well for us. Aside from dry foods like rice, nuts, beans, pastas, etc.; fresh vegetables can also be done. They last so much longer in a vacuum sealed mason jar, but obviously need to be refrigerated. Thanks for the video and happy canning!

Thank you. I am a beginner. I recently purchased a HR freeze dryer and food saver. I’m still experimenting but prefer the idea of saving my foods in jars. I like to see the food. The mylar bags are ok but not my first choice. I’ll probably save those for camping and road trips.

One thing I learned today while trying to vacuum seal regular mouth pint jars, I made several attempts and they would not seal, I needed to place another lid upside down on top of the lid that will actually be sealing the jar then place the vacuum sealer lid on. Once the jar has sealed remove the second lid and screw on the ring.
Today I wanted to seal some jars that were too small for my jar sealer attachments
(little small relish jars). All I had was the little handheld FoodSaver, that sits in the dock, to vacuum seal them. The little black one.
I wrapped thick rubber bands around the threads of the jar until I got it thick enough to make the jar attachment fit. I poked a hole in the top of the jar lid with a push pin. I cut a small piece of black electrical tape and put it on top of the lid, just to the side but left the hole open. Then I use my handheld sealer to seal the jar and IT WORKED!!!
VERY MUCH TO MY SURPRISE!!!
There's a video on UA-cam that shows you how to do the tape and push pin method so I just tried it, plus I added the rubber bands to make the attachment fit and it worked like a charm. I filled the jar with marshmallows so I could watch it to see if it was working and it did. The little black sealer just suctioned that tape right down into that hole, DONE!
I was so excited because I have lots of those little jars that the attachments don't fit.

I’m confused…, if you sealed it with a handheld vacuum sealer, then the air would come out as soon as you removed the vacuum pump ? I never canned before and am new at this, but I do have that little handheld one from FoodSaver …….,

I vacuum seal with a hand held brake bleeder from the auto store. Works great.
When I vacuum seal in my FD it does spray the water occasionally because of the water droplets still in the hose. My guess there's more actually in the machine leading to the tube. But like you said it doesn't hurt anything so I don't worry about it. This is my favorite way to vacuum seal now. I even do my mylar bags in the FD. It's amazing how much air is removed.
Do you partally seal the bags? Seems like if you left them open they would reabsorb the air when the door is opened. I have sealed bag all but about a quarter inch then used food saver to suck out air before sealing that quarter inch but.....sometimes the air gets back in. Please explain you method with bags in freeze drier. Thanks.

Talk to family about sharing cost of a freeze dryer and rotating it with family members. Make a party of it.
I bought a relatively inexpensive rotary-vane vacuum pump. I bought a brass fitting that fit its vacuum port. Then I enlarged the hole with a tapered reamer so that the plastic connector from a seal-a-meal jar adapter fits snugly. I can pull 25 inches of vacuum very quickly on a wide or narrow mouth jar with my pump. I only needed to modify the one brass fitting to do the job. The tapered reamer was the key tool for doing that job.
I vacuum seal my coffee beans that way. Works out well. They are usually rotated out by 2 years so I haven't tested them for any longer than that.
We use just a Food Saver machine (very old one) with the jar sealer attachments, the usual vac bags and one of their latest portable hand vac units to seal the canisters and the "zip lock" resealable bags

Real informative interesting way to use a freeze dry machine I’ve never used one but I’ve learned some thing thank you. iTunes Store all of my dry proju in mason jars rice pasta beans all of that stuff but I have a chambered vacciler I do it that way one or two jars at a time takes about 30 seconds I guess that would be another way of doing it.
How long did you run the vacuum pump on the jars ? Was there a particular mTorr ? Thank you

In europe, the jar adaptors are long to get, so I'll let me be inspired by the big vacuum chamber and vacuum my jars in a plastic box, with a hand vacuum device hahaha :D

We've been watching your great informative videos since January when we got or new HR Freeze dryer
Nuts and flours also have insect eggs inside. Vacuum sealing will help prevent them from going into the larvae stage. (If you freeze them for three or more days it usually kills them as well)
At times, the regular lids won’t seal. When that happens, put an upside down lid you’ll use for just this purpose, inside the sealer, then it’ll seal.
I'm also curious how you would steal something if there was no electricity. You guys seem pretty resourceful, so I'm sure there's a way.

At 3:59 you show a great image of the display of the freeze dryer panel. It has the pressure on the display. Your ambient pressure at the time you did this video was 69131 mTorr. I always vacuum until the pressure is below 1500 mTorr. Then I know that I have a very good vacuum. Air is 21% oxygen. The more air you vacuum out the better. That is how I store almost all of my freeze dried goods. Short term buying the jars is more expensive but as long as I keep them in the dark in my cool basement they should be just as good as Mylar bags and I can reuse them without o2 absorbers.
@@TheProvidentPrepperHow you adjust for what? The vacuum pressure? Just watch the numbers drop while the pump is on. The longer the pump is on the less air will be in the vacuum chamber.
Could you share where you buy in bulk? Everything i have found online is equal or higher in price than off the store shelf and then there is freight cost.
I love walnuts and l found they last longer if l buy them in the shell and keep them that way until l want to eat/use them.
I am going try and vacuum seal in a mason jar tho. Never tried it.
Can you vacuum other bottles like pickle jars pace picante jars, and cheese dip jars so you can store small amounts items
I am doing oven heating for flour and rice. I it seams to work well. I rotate fast so no loss or great time stored, yet.

When vacuum sealing with mason jars, do you always use rings on all your jars and leave them on?

I have heard that if you freeze dry goods for 14 days it will kill any big eggs.
So my question is:
Could you put rice in a vacume sealed jar then freeze for 14 days before moving to storage shelves?
Should you oven bake for a few to ensure dryness of rice or beans after freezing and before canning?
Would you need to use a moisture packet inside or no since the rice and jar is dry prior to freezing?

Kylene, since you have a chocolate addiction, try vacuum sealing chocolate chips. (without an O2 absorber) I did and they lasted about a year. This would get you through your " 90 day No Shopping Challenge".
My son-in-law has an addition to Reese’s Peanut Butter Cups. At Halloween, I bought a couple of bags of the mini cups, vacuum sealed them in pint jars and labeled the jars January, February, March……. Gave the 12 jars to him and told him it was “portion control”.

I have just purchased an HR Freeze Dryer, and found the manual said not to use functions in isolation and that this could void the warranty and damage the dryer. Is this just marketing or should I take note? Secondly, how do you open the lid on the vacuum sealed jar without damaging it? I realise my questions come at least 12 months after your video was done, but I'm hoping you can help me. Thanks in anticipation (from Australia).

I LOVE my food saver. It has saved me soo much money over the years. I told my Sister she needed one and she always said no....... now she loves hers also. Because I use it all the time it is always on my counter not an item that gets put in a closet. I am in the process of getting my own HR do you think you could fit gallon jars since there seems to be NO attachment that can seal those. I like to store things in FREE gallon jars that you can pick up from like party stores, but I can never seal them. I know you can "oven can" but I am not a fan of doing that.
I was just on a prep site that sells a-lot of freeze dried food…. in 1 gallon jars, and they sell gallon jars for food prep. Their site says, “We use Sublimation, a process that uses a vacuum chamber to turn water into steam, drying the food and reducing the weight considerably. The process happens so quickly, the food retains much of its original shape, and because the food is kept at a low temperature, many of the nutrients are preserved.”
They would be wonderful for churches, shelters, poor, homeless and destitute groups of people …….
Food-saver only works with 2 sized mason jars…. and I know it’s smarter and efficient spending a bulk amount upfront; there’s a couple questions I have regarding the Harvest dryer :
If someone needs different sizes of mason jars or jars/cans, can a Harvest dryer use them because it doesn’t need to be vacuum sealed by food-saver mason jars …. ? All of these prep food sites use #10 cans which last 30 yrs ?! Also, the Harvest is dependent on electricity. I found a few nice cheaper ones, def not as nice as yours (not referring to any of the Amazon cheap China knockoffs) I would love any feedback you can give …… thanks
Help! Six or seven attempts, narrow-mouth glass jar (dried beans or dried flax seeds), when I remove white FoodSaver vacuum lid (same as 01:53 here) the metal canning lid comes off too. Half the time my blue silicone liner pulls out too. What gives?

Hi, I enjoyed your presentation, but I would like a little more detailed explanation. I am totally blind, I have purchased the largemouth and smallmouth ceiling lids that came with a hose for my food saver can jars but the part I’m missing is do I need for instance, on a mason jar, the small mason jars or the large, do I need the canning flat lids that have the seal around them on the jar before I put the ceiling mechanism over top of it? If that makes any sense. I know you are visually showing how to do it but I missing that piece of it. if you could reply, I would appreciate it, thank you so very much! 0:03

Is it safe to vacuum seal beans in the clear bags that come with the food vacuum sealer? If so, do I need an oxygen absorber?

I understand we need 1" of headspace with the vacuum sealer but what if we have more than 1"? Is that acceptable? What if I have 2" of headspace? Like say I want to use some of what's in the jar but not all. Can I just re-vacuum the jar?
I’m no expert but I think it will take longer to remove the air out of the jar if it’s not full……just try it and see if it seals……

I freeze dried raw eggs and then put the powder in mason jars with oxygen absorbers. I did the same thing with freeze dried milk. The jars have all sealed but now I am wondering if that was the best way to store them. I did not vacuum seal. I had no idea it was even done. Are my freeze dried raw eggs and milk safe?
Are your vacuumed sealed nuts raw? Or can you seal salted , roasted etc for longer storage?
