Agree that Nam Sing is too inconsistent... so I visit less now. Can't recommend Nam Sing. Come Daily has become less oily now compared to the past.. n that makes it even better imo. The consistency is amazing too.
I tried one stall at a coffeeshop along Serangoon Rd, if i'm not mistaken, it is called Original Serangoon Hokkien Mee. and another called Kim's Famous Fried Hokkien Prawn Mee near Eunos MRT

How can you miss out Yang Zhou fried hokkien prawn noodles? Original Uncle moved from Beo Crescent to KPT Kopitiam Alexandra at 126 Bukit Merah Lane 1, #01-230, Singapore 150126. That is the traditional one that you need to have. None others come even anywhere near his standard! They are open 8am to 3pm from Mondays to Saturdays.

The best hokkien meet is not the best in my view, his father's style is better by a mile! If you want to taste the original style try the store at a coffee shop in Yishun near the mall. That's the store set up by his father's disciple, this store retains the original taste which is a lot better in my view than the one you recommended as number 1. That's if you want the original style of that store's hokkien mee.
Based on taste of the food. I have been there and at the time I went there, it is good. Most of the time I am there, I did not have any problem with the food.

Only place to eat Hokkien prawn mee is in Singapore..? Excuse me..? Cross over to JB ,there are so many places doing this same stuff..! But do look for signage saying Hokkien 'Prawn' Mee and not just Hokkien Mee.!

IMO , that Chomp Chomp stall is good but the mentions on the lists are all better.
