Great video. I prepare my dasheen bush the same way but a nice tip you could try is rubbing some lime or lemon on your hands before peeling the stems and it will prevent the staining.
Thanks for the wonderful recipe...i tried it using spinach because cant get my hands on callaloo bush here in Florida...i am so impressed with how the rosemary made this dish so much sweeter....its like it bought the flavor of the bush out more and not compete with it the way the thyme does. Try it guys...best callaloo I ever made. Simple perfection...thank you
I use a potato masher .I don't lay out the caloo bush as you do but I rolled piece by piece and cut the ad you did. First time I know you can use the coconut water to cook. Good food you have here.

I myself love bay leaf & I came up with a spice blend which includes bay leaf & can be used for both cooking & baking. It's half teaspoon of ground cinnamon with quarter teaspoon of ground bay leaf & quarter teaspoon of ground nutmeg. I call it TRINI MIXED SPICE. To grind the bay leaves,wash & dry them in the oven or naturally,then blend them into a powder using a coffee grinder. It works wonders, please try it & let me know what you think.

This is top and bottom with a twist. Will try your method next time. I grew up having to peel the bush. It's something I no longer do.
