      Lol I just finished watching you on t.v and then seen you had posted this. Omgosh this fudge looks incredible. You make it look sooo easy, thanks for sharing your knowledge with us Anna. My favorite fudge is probably the basic old fashioned style, although this one looks like it could be a contender!!🍫🍪🍩

    I'm not a fudge lover, but this honestly is the BEST fudge I've ever tasted.. We tried adding a tiny hint of coffee powder, it tastes amazing!

    This is such a great recipe! More complex flavour than just those five minute condensed milk and chocolate recipes, but you don't need a sugar thermometer!

      You can add nuts and dried fruits as long as you add to the mixture after it has been cooked but before it cools down

    Hi Anna love to try this recipe, however there are heaps of negative comments in regards to their fudge not setting just like yours in the video. Some have mentioned in regards to using condensed milk as I am guessing by now some countries have more than one kind of condensed milk , so they maybe using the type which is not similar to yours, however, I understand condensed milk is the sweetened kind, as that’s what’s available in Australia. Apart from that is there something else causing this fudge not to set properly without refrigeration or even after being refrigerated and brought out to room temperature it turns mushy?? Please do comment, as we know your recipes always works. Thanks in advance.

    I made this today, and I have to say it is absolutely delicious! The recipe and directions were very easy to follow. It was my first time making fudge and I really enjoyed it! I just have one question/problem. My fudge does not want to set up. I left it for two hours on the counter, now I've had it in the fridge for three hours. I just took it out and tried to cut it, but it stuck to my knife and basically started collapsing where I had cut it. I've already decided to leave it in the fridge overnight, but does anyone have any suggestions as to what may be wrong/how to fix it?
    It did set up overnight in the fridge, but when I left it on the counter and it came up to room temperature, it just melted into a single blob. I wish I could figure out where I went wrong.

      Same thing happened to me. It is a ganache after 3 hours in fridge. Tastes great but i dont know what went wrong. A couple otherpeople have posted same problem.

She used sweetened condensed milk. I can't believe no one caught the fact that any fudge has at least 2 cups of real sugar in it adn hers only says 1/2 cup. The reason is that it is sweetened condensed milk, not just condensed milk. Many seem to have made this mistake, so I am posting this to each one I see since this person pinned my comment but people don't seem to be seeing it.

    EDIT: I also added 1/2 tsp of espresso powder to boost the chocolate intensity. Love what a little coffee does for chocolate.

      @@pollyfoofoo8703 Nope, mine came out too soft too. I see others mentioning the same issue. Had them in the fridge for 2.5+ hours. Plus, I only had a 9" pan instead of an 8", so they were thin and soft. I then improvised and made a batch of brownies and plopped the soft fudge on top. They were amazing (and incredibly rich)! I see someone commenting to try less condensed milk, so I may try that out but haven't yet.
      I will mention that mine were CLOSE to set. It wasn't liquid. But very "melt-in-your-fingers". Too soft to eat by hand but the brownies gave it a good base to work with.

      elgiacomo thank you for your reply! I have twice now reheated the 'fudge' on the stovetop to as high a temp as i can without burning it, thinking that maybe the heat will get the sugars to set. If it doesn’t set this 2nd try, i might try your brownie idea. I'm really bummed though because i want to understand what went wrong.

    I tried making this and it tasted amazing, but it didn't set up firmly. It was more like a firm nutella/spread consistency. Any thoughts on what went wrong and what I can do next time to avoid that? It tastes amazing and I want it to work so badly. I tried one of the fudge fixes I found on Google but it didn't taste as good after I tried that and I ended up scrapping the batch, which is too bad because it seriously was soooo tasty.

      Try halving the amount of condensed milk. See if that will harden up your fudge.

    I made this recipe. It came out the way it was supposed to and looked just like hers. Even though I love fudge, I would not make it again. It didn't taste as good as it looked. I did use good chocolate. I'm not sure the ratios of ingredients are ideal.

      polly foo foo did you let it sit for the 5 minutes after stirring everything together? I almost forgot this step. I remember when I put it in my pan. The first batch didn’t set as good and that was why. The second batch was perfect.

    Mine doesn’t appear to be setting. It is more like ganache. I don't think it was crystallizing when i let the mix sit for 5 minutes. Anyone know what might've gone wrong? I have scrolled through the comments and it looks like there are a few of us who ended up with fudge that won't set. I would love to know what we did wrong please. It tastes REALLY good but it's way too soft.

      @@debio1135 I’m sorry, but you don’t know what’s wrong! I find it a little arrogant that you would post your reply to every single person that said that their fudge did not set. I’ve yet to see a single commentor say that they didn’t use sweetened condensed milk. There’s clearly something else wrong with this recipe. Such a shame, and I wish that the original author would reply with suggestions as to why this fudge isn’t setting for almost everyone on this message board

    Anna, you should go ahead with this and bake it into a cake after adding the other ingredients. All chocolate fudge cake online and elsewhere use a regular rich chocolate cake and a fudge frosting but adding fudge into the cake batter makes the cake fully fudgy. It goes well with a melted milk chocolate frosting. The cake is not has the sweetness just to taste and a noticeable saltiness because of the cooked sugar and butter and the tempering of chocolate giving it a mature flavour.

      Maybe you can try halving the amount of condensed milk. Normally condensed milk is very liquid even when in the fridge.

    Can you use anything other than sweetened condensed milk. Allergic to regular milk. I usually use almond milk. Could I use sweetened almond milk and add a cornstarch rye to thicken?

    Does it change the chemistry at all to use a darker chocolate? Would you need a different mix of ingredients if you used say a 65% chocolate? Maybe 70%?

      Christine Ford same thing happened to me! I made it yesterday. In fridge for hours but it is way too soft. Wish i knew why. There are a few other posts from people who had same problem.

      Christine Ford that sounds good! I ended up reheating mine a couple days ago, taking it to nearly 200 degrees. It set better but still too soft for a fudge, so i rolled into balls and coated in cocoa.

I can't believe no one caught the fact that any fudge has at least 2 cups of real sugar in it adn hers only says 1/2 cup. The reason is that it is sweetened condensed milk, not just condensed milk. Many seem to have made this mistake, so I am posting this to each one I see since this person pinned my comment but people don't seem to be seeing it.

      You can make a substitute from 1 cup sugar with 1/4 cup warm water to dissolve the sugar. Basically you're ending up with a cane sugar syrup instead of corn syrup. It's to help the setting process. You only use 1 TABLESPOON of the 1 cup you've created in this suggestion though, just one Tbsp, not the whole cup.

      She did say “tempered glass or metal bowl” to prevent the corn syrup mixture from cracking or breaking the bowl.

      The thick glass mixing bowls are usually tempered, but not always. It's sometimes stamped on the bottom. It might say Pyrex or Oven safe.

      Yes, you can substitute. It will make extra because I only know how to make a cup of this substitute, and this recipe only needs a tablespoon. Sooo, that being said, dissolve 1 cup of sugar into 1/4 cup of water making sure all the sugar dissolves. You should basically have white sugar syrup instead of corn syrup. all this does is helps the concoctions set better, but remember, of this full cup of substitute, you'll only use 1 Tablespoon
      Apparently the author of the video only replies to positive comments and not to baking or cooking inquiries. A face to sell videos imo.

    This recipe just did not work for me. The fudge came out way too soft, almost liquid still. Most recipes have you ensure you cook the ingredients up to a high temperature around 235 degrees F. This one just has you cook until the sugar is dissolved. I believe that is the issue. That being said, the trick with the parchment paper has already come in handy a couple times, so thanks for that. :)

      I thought condensed milk means sweetened condensed milk, is there another kind , I meant unsweetened or semi sweetened?? Supermarkets in Australia only sell one kind the sweetened condensed milk. I supposed other parts of the world condensed milk means something else🤔

      Jervis Rato if you look through the comments you will see quite a few of us had trouble with this recipe. I am not sure what is wrong with the recipe. Did your fudge set? Mine did not. I reheated it up to 200 degrees and it still would not set but it was better. I ended up rolling into balls and rolled in cocoa.

      Yep, I reheated it to 246 Fahrenheit. It got better but not fudgy. I had to scoop spoonfuls of it and dust it with icing sugar to make it presentable.
      I did use sweetened condensed milk. But I don't think that was the issue. When I tried it with a milk chocolate that had a higher sugar content the fudge set perfectly. It kinda was too sweet though. Will have to keep experimenting.

      Debio i too used sweetened condensed milk but my fudge would not set until i heated the whole thing up to 200 degrees, and it still wasn’t fully set but manageable.

      She cooks by weight, so likely she weighed it, but the measurements in approximation are on the side of butter sticks... by tablespoon and 4 tablespoons equals a quarter cup. Typically butter is sold in 1/2 cup sticks. She did say 3/4 cup. AS in measured by a quarter cup measure 3 times or a half cup measure and 1/4 measure to make it 3/4 cup.
