Thank God with Indian food their is no right way or wrong way...It's like Mexican food, eat it how your soul tells you to. I've seen Indians who eat with utensils. I've seen people eat it by scooping their food with their bread or going all in with hand only...It's all about enjoying the delicious food and good company...
In my travels, I had been told to never use your left hand to touch the plate or dish. Is that not the case? I noticed that you touch the side of your dish.
Most people in India are right handed so they pick their food in right hand. Its messy to use both hands for food cuz then you won't be able to touch anything without dirtying it with food. Left hand is discouraged not just for food but also for writing. Its just partly superstition and tradition. And you will find many abberations to such rules in many parts of India. The argument of (the Wiping out a** with left hand), is only made to sound logical, which anyway is partly logical, cuz both hands are washed properly with soap( ashes in ancient times) after pooping and also before eating, which makes it more hygienic enough. I used left hand but was discouraged to do so. Now i can write and eat with both the hands.

Im indian and that practice is somewhat very old, no one pays attention in what side you eat your food anymore lol
