I still eat some meat but I am slowly inching to a vegan diet, I think the key in changing people's minds is learning to cook good tasty meals without meat, plus there are also some great vegan alternatives, Beyond burgers are better than the real thing to me.
Congratulations for open up your UA-cam channel Erica 👏 I love that you show side of the professional chef that can be just like rest of us (ie cook more dinner for lunch next day). Looking forward for all your up coming videos. I would love to see more asian inspired meals/family meal prep contents!

Great first video, and the food looks so tasty! I'm excited to try the taco mixture in your class :) And in regards to your budget inquiry, I'm a single human + one cat household, and on a normal week I try not to exceed $50 on food, and have had weeks as low as $30.

Yay, thank you Margarida! And I am definitely not opposed to the microwave for reheating leftovers! I use it for most things unless I want to re-crisp (for re-crisping, I use the stove or broiler!)
This is super random but I am (over) due with my first baby and going in for an induction tonight. We’re actually naming our son “Quinten” and I’ve been freaking out over the whole induction process, but watching this video and randomly hearing the name in your video and seeing you eat dates as a snack right after (which is supposed to support the labor process) made it feel like a sign everything is going to be okay 😂. Maybe it’s just my wacky pregnancy hormones, but regardless, I loved the video, recipes, seeing your kitties and am so happy to see you have a channel now! Thanks for the video 😊

$77 feeds my family of 5 for a week, I don't see near that much food in your haul. I've never seen Trader Joe's as a place to shop for everyday groceries, I really only go there for the novelty items as a treat or maybe something special if company is coming over. I probably only shop there once per year. Most of our groceries are bought at Cosco. We buy staples such as oats, beans, and rice in bulk from the appropriate ethnic communities or stores- cheap oats from an Amish store, beans from a Hispanic store, and rice from an Asian store. You can get much better varieties of these items for cheaper than if you bought in bulk from traditional stores like Cosco or Sam's Club. We don't really buy canned vegetables or beans since it's usually cheaper to use fresh ingredients. My personal largest food expense is egg whites and fresh berries. The egg whites make super easy and fast low calorie but filling high protein breakfasts or late-night snacks, and the fresh berries get added to oats or yogurt bowls along with homemade granola. We also make our own tortillas since it is cheaper and fresh hot tortillas generally taste better than ones that have been sitting around for a few days. For desserts, which we really only make ever 2-3 weeks, we we usually make a quick fresh fruit cobbler or crumble, or make our own ice cream. I have been in love with the ice cream maker, just dump in some ingredients and POOF ice cream an hour later. Some of the richer custard recipes take longer to make, BUT you can prep those ahead of time and let them sit in the fridge for a couple days before making them.
So glad this works for you and your family!! Costco is so great and if I had easy access, I'd definitely take advantage too! TJs and Wegman's are the spots I have easiest access to without a car :)
Dates and prunes are delicious and good for you, I am happy to see people eat better quality fresh food and vegetables, we as an obese nation need to stop eating processed GMO and red mead laden diets, a little is alright but stick mainly to fish and chicken. I love your cat. 💕
