I made these brownies. I had some trouble with the espresso completely mixing too but it was fine. Your brownies look great! I just don’t think you can really go wrong with this recipe. It’s a lot of hard work, but I agree with you that it’s worth the time. I bet there aren’t any left!
Great Video. Are you sure you burned the butter? The flame in Alvins video looked pretty hot. I don't know, I used a dark pan and I probable burned the butter when I made them, they still came out super good. I guess I'm gonna watch some browning butter videos. Edit: welp after watching some brown butter videos, they suggest using a light coloured pan to do it properly. I guess I'll have to bust out the old stainless steel pan next time.
If you're browning butter to put into something you want it properly browned. At the restaurant I work at we mix some browned butter into room temp butter to put onto our butter plates we send out to the guest for dinner with our home made sourdough baugettes and let me tell you the brown butter is DARK when you make it. Literally 30sec longer on the stove and it would be burnt. You need to toast it properly to get the brown butter notes to fully come through in this bake. Go on a medium low to medium heat and just keep stiring for 30-40min, slow and easy and it'll turn out perfect everytime!
you didn't brown the butter lmao. i made these a couple of days ago and the butter didn't look yellow like yours did. you simply just melted your butter and added espresso in it. it initially smelled burnt as well but as you keep stirring on a medium to low heat it turns brown and toasty in colour and that's when you add the espresso and the ice cube. i can assure you these are delicious but brown butter makes everything better.
good things take time so you gotta patiently wait for your result because that butter took a long time to get browned. just make sure it's a constant low to medium heat.
