These cookies are an impressive little snack for special occasions and weekends, and the best part is getting the kids involved, get them working for those snacks! It’s great fun, the kids love it and hopefully you’ll get a cookie or two out of it as well. These are quick and easy to make, oaty and delicious. Jools has a great freezer hack for future cookie goodness, just watch out for freezer snakes!

Ingredients
100 g spelt or wholemeal flour
1 teaspoon ground mixed spice
½ teaspoon bicarbonate of soda
250 g porridge oats
100 g raisins, sultanas or whichever dried fruit you like
25 g mixed seeds , such as pumpkin, sunflower, flaxseed, sesame
100 g unsalted butter , (at room temperature)
50 g golden caster sugar
50 g soft brown sugar
1 large free-range egg

Did it for the third time. I love the cookies. Even on Wednesdays, quickly on my coffee break.
Quite easy. Without children, I first put the raisins in grappa or rum. I also used chickpea flour.

how many grams is the caster sugar?
It'll be 50g, equal to the amount of soft brown sugar used (and that then makes equal quantities of flour, butter and sugar).
