7 oz gruyere
2 oz brie (no rind)
2 T Vermouth (or wine)
--> mix into paste
a few chives
--> 4-5 pulses to incorporate
3T softened butter
1 tsp dijon mustard
--> mix
8 slices bread (any kind - rye is recommended)
12 inch non stick skillet - heat over medium heat, 2 mins
cook sandwiches 2 at a time, 3-4 mins on each side

I've made this in the past based on this recipe & its always been wonderful. Especially with tomato soup or grilled tomatoes on the side. Any leftover cheese spread is great on crackers.
Tried this recipe the other day! It will not disappoint. Even down to the Dijon Butter it was amazing. Only thing I swapped was the bread, I made mine with sourdough. Also found a double cream Brie, made it devilishly melty 🤤

I add the dijon to my paste as well. My mom thought I was crazy for making a cheese paste to make my grilled cheese. I feel vindicated haha
I melt butter in the pan, put two pieces of bread in pan, top with grated cheese, cover with glass lid, cook till melted, then take lid off and flip one on top of the other and serve. The bread is toasted equally on both sides! Love the addition of Dijon.

Adam, swiss gruyere is my fave cheese, instead of putting it in the food processor, you need to shred it on a box grater & then let the cheese sit out for an hour to get room temp under a a damp paper towel. It will not separate or be gritty, melts to that light pungent, nutty flavor & no brie needed, btw NO mustard, but if that's your thing, have at it, but you are hiding the taste of the gruyere

This is definitely an elevated grilled cheese - it's got a fondue-sorta taste because of the vermouth. This is now my go-to for grilled cheese!

I confess I have a metal block about buttering bread on the outside of the sandwich. I shall have to force myself soon to do this even though it is borderline fried bread sandwich (which I adore, chech my waistline).
Love this recipe. If I don't use alcohol, what should I substitute for it, or do I even need to use anything. I can't have any alcohol at all!

My wife and I are living Wisconsin so Jesus came any Jesus good. Greer sounds really good though. When I was a kid the only grilled cheese sandwiches that we had was American or Velveeta and they're still good today with dill pickles
Can't forget that grilled american cheese with tomato soup. That's what I do. The gourmet grilled cheese with that pickle is my favourite as well. I also began using olive oil mayo instead of butter. Just a bit more healthier.
I do use two cheeses! Sharp cheddar and Baby Swiss! I will use whole wheat or sourdough bread with mayo seasoned with Lemon Pepper, Garlic Pepper, or Mrs. Dash with some Old Bay!
I like the way Julia measures the butter - just take three chunks off the end of the stick! There are times when measuring ingredients (especially by weight) is important. Making a grilled cheese sandwich is not one of them! Only thing I would have liked better is if Julia had popped one of the cheese cubes in her mouth. The advantage of being the cook!

So I'm washing a food processor (and blades), a bowl, a cutting board, a chef's knife, a spoon, a butter knife, a measuring spoon, a skillet, a wire rack, and a baking sheet just for grilled cheese? That's a lot of dishes.
You should try the "Comté", looks like the gruyère but a bit more flavor.

Is there a segment of buttering bread for grill cheese vs mayo-ing the bread?
Beginner toaster. Butter side on the cutting board was awkward.
You close the buttered slices into a temporary sandwich.
Then you add your filling on top.
Then you put the current top slice into the pan.
Then cover it with the bottom slice.
No mess. No fuss. Towers of Hanoi rules.
Is that the same food processor used by the Mythical Kitchen?

What are some suggestions for those that need recipes 100% alcohol free? Have family members who cannot have any alcohol otherwise they get seizures from it.
Just leave out the alcohol. You don’t need to use it.

Interesting, @mythicalKitchen just tested butter on bread, butter in pan, and mayo and found that butter in the pan was the best due to the browning of the butter in the pan. I'd love you know what you think of this spin Julia.

I can’t stand the cheese I had as a kid now (Velveeta or Kraft slices). It tastes like plastic to me now. I like cheddar or Colby jack.

I have done well buttering the pan myself and do get even results. I just press down on the sandwich a briefly when it is in the pan. If you do have butter that is left out at room temperature, then it is easy to spread on the bread slices, but if all your butter in the fridge, you're just not going to be able to do it evenly and without tearing the bread.

How to make this without a food processor?
Grate the Gruyere very finely with a box grater, add the Brie and mash it into a paste with a potato masher. That’s how I’d do it. You’re only trying to mixed the two cheeses until incorporated. It will melt together when cooked. Perhaps it will take a minute longer to melt homogeneously but I think that would work.
Well, I guess I'm not a grown up when it comes to grilled cheese because I find that the good Ol' American Cheese slices (well, it's kinda like cheese) with white Wonder Bread still make the most tasty grilled cheese sandwiches.

When did everyone start saying the t in often?
The only nit-pick objection I have to using Gruyere in grilled cheese is that real Gruyere is a raw milk cheese and therefore is packed with probiotics and enzymes that heat will destroy or degrade. For me a grown-up grilled cheese uses an aged imported Gouda that melts very nicely and tastes superb. Adding some Brie in is a good idea that I'll have to try.
In the United States, supermarkets don't sell raw milk cheese; US gruyere is always cooked.
@@dchenkin02 Sorry, but I just bought raw milk Gruyere yesterday at a chain called Trader Joe's. They had three different raw milk Gruyeres as a matter of fact.

By "Grown up" grilled cheese you mean a "middle class" grilled cheese, not all of us can afford Gruyere.
Well, it’s probably not something you would want to make ALL the time, anyway, so just save up and get some Gruyere as a treat. Besides, you can get a quarter pound to a half a pound for a reasonable amount, unless you’re going to an overpriced cheese monger.
She also said, by the way, that you can use an aged cheddar. Actually, it’s the price of a decent Brie that I think you should be worried about…

Total disappointment. Lacked any real flavor. I do like bold flavors and this didn’t excite the taste buds.
Now I’m left trying to figure out how to use up the leftover cheese spread. Cost too much to trash but I won’t waste my time making more of these sandwiches.
