Ingredients:
400ml (1 1/2 cup) olive oil
3 potatoes
6 eggs

Ingredients:
2 potatoes
4 tbsp Greek or Turkish yogurt
1 tsp hot sauce
2 tbsp Olive oil
1 tbsp butter
Season with salt and black pepper
1/2 tsp smoked peppers
1/2 tsp turmeric
1/2 tsp thyme
1 egg
1 tbsp vinegar
Salt
Sprinkle with olive oil, salt and pepper to taste!

I'm from Spain and I'm happy that the recipe is true to the original. That not always happens when cooking food from another country. Nevertheless some little variations exist. Some people don't like onion in Spanish omelette. Also the cooking point of potatoes can vary slightly depending on how you like it or even on familiar tradicion.
About eating it the next day, you can heat it, but it isn't mandatory. Spanish omelette is tasty at room temperature as well. Many people out of Spain doesn't know it. Just try and decide if you prefer it re-heated or not. I like it both ways.
As long as you don't dry out (over cook or cook too long) the omelet it is just as delicious cold as it is warm. Sometimes it was our main dish and other times we'd have one or two slices as part of a meal like thin sliced steaks with onions (Puerto Rican dish) or pork chops. Often times we'd just eat it cold the next day if there was any left over. I'm happy to see people teaching others how to make this.
Studied Spanish for 2 years, spent 2 wonderful weeks in Spain and still long to go back.

Nice tortilla de patatas, but it tastes much better when you cook the mixture less.
After resting for 15' you throw it in the hot oily pan for 15-30 seconds and flip it. Then turn the heat off and let it rest in the warm pan for about 3 min, plate and let it cool for about 10 min.

My grandparents are from Spain. I grew up eating this with a side of Spanish chorizo. I now make this on my own to honor my grandparents and my two daughters always are excited when I make it. We do it the exact same way, except I drain some oil, then add the beaten eggs to the potatoes still in the pan. ¡Que Rico!

Soy español, habré hecho miles de tortillas y te digo que si pones la cebolla antes que la patata, la cebolla se te quema.
Los huevos se baten antes de poner la patata o te vas a tirar un montón de tiempo hasta que sea homogéneo, la tortilla ha de estar jugosa, esa está seca, de hecho, al darle la vuelta se ve que cae como una cosa dura y ni siquiera mancha el plato de darle la vuelta, pero bueno, seguro que sabe bien

Y yo soy español...y siempre he puesto primero la cebolla un ratito para pocharla y luego las patatas .Los huevos no se han de batir sino mover para mezclarse las yemas y claras pero jamás como para una tortilla francesa,se deben verse hilos de yema y clara así mucho más sabrosa.Estos son consejos directos del cocinero premiado mejor tortilla en varias ocasiones.
Es más sencillo. La receta original de la tortilla española no lleva cebolla. Se puede añadir, pero también se puede chorizo, ajo o pimienta, y queda muy rica.

Dos consejitos para perfeccionar la tortilla de patatas española: 1. Corte la patata más fina; 2. Bata los huevos y echéle sal para que no le quede sosa. No es necesario tostar tanto la tortilla por fuera.

Most countries that eat potatoes have a version of the 1st recipe. As a child, we just called it warmed up potatoes with eggs. We used leftover boiled potatoes. As I got older I met a girl at the beach, she said her family called them Russian potatoes. So it seems we all share that dish.
As for the 2nd recipe. The 1st time I had paprika on potatoes was in the Army, and didn't like it. LOL

Hola, para hacer la tortilla española, primero las patatas se cortan mucho más finas, las has cortado muy gruesas. Los huevos hay que batirlos, no se mezclan así con las patatas. Las patatas no se tuestan, se deben estar bien fritas pero tiernas, para eso ayuda haberlas cortado finas. Por último la tortilla española puede o no llevar cebolla.
No todas las mezclas de patatas y huevo son tortilla española. Saludos

En cualquier caso es quizás la mejor tortilla de patatas que he visto cocinar a alguien que no es español en las redes. Vale que hay que batir los huevos, pero tampoco es imprescindible, yo los bato muy poco para que quede más jugosa, y el efecto es parecido a lo que ella ha hecho. Lo del tamaño de las patatas...eso va a gustos, yo he comido tortillas de patatas cojonudas con la patata cortada en daditos, y con la patata laminada finita, que es como la hago yo. La cocción de las patatas...es también para gustos, yo soy de los tuyos, fritas pero tiernas, pero mi madre hacía una tortilla con la patata muy dorada y estaba de muerte. Lo único es que el cuajado final le sobran 4 minutos de cada lado. La ha quemado y eso sí que es una pena.
Y hay que echar sal. Sin sal no sabe bien, lo sé porque alguna vez se me olvidó añadir. Y no la admite siquiera después de cuajada

My omelette recipe is two eggs mixed with a clove of chopped garlic, some chives chopped, (or red onion) grated cheese and a sprinkling of chilli olive oil. Four minutes in a microwave...simple. Served with chestnut mushrooms. I just dreamt it up.

I’m glad you added onions. I add them after the potatoes so they don’t caramelize as much. I’d cut the potato much thinner and add salt and pepper to the egg, mix it and then throw the potatoes in. Also at the end I wouldn’t leave the tortilla 4 minutes like you did, looks a little bit overcooked. I usually leave it like 1.5 minutes on one side and 30 seconds on the other side. It depends on the thickness, your stove and preference I guess.
I agree the tortilla has to be soggy in the middle…Except u put the onion and potatoes together in the pan to fry in abundance oil and no pepper just salt😉👍🏽

Ha quedado demasiado seca. Se notaba al sacar la tortilla al plato. La tortilla tiene que quedar jugosa, incluso con el huevo un poco líquido. Una tortilla seca no está rica porque, como decimos en España es un "mazacote". Sin embargo, las patatas y la cebolla, al principio quedaron estupendas. No dejes la tortilla tanto tiempo en la sartén haciéndose y te quedará genial. Seguro. Enhorabuena!!

As a spanish I must say a couple things:
It is better to cut the potatoes to dices. They will be better cooked and give the tortilla a better, thicker shape. Sliced potatoes tend to flatten the tortilla.
Onion should be poached but never fried, and remember that onion is optional. Always cook the potatoes first and add the onion later. NEVER let them get crispy or the tortilla won't taste juicy.
Eggs must be well whipped before mixing them with the potatoes. Solidified yolk or egg white is a no no.
This omelette must be thick. 2 fingers minimum. Use a decently deep pan with rounded sides.
And how cooked you want the egg is a personal preference. Some want it liquid, some like a good solid omelette

Good job! Now, a few pro tips:
- Proportions: 1 large egg / 50g potato.
- Chop the onion rather than making Juliana slices.
- Slice the potatoes into SMALLER and IRREGULARLY SHAPED pieces, so they don't stick to each other.
- Start with strong fire, then lower it to a minimum, and cover for 5-10 minutes - This will soften them on the inside.
- Slightly whisk the eggs BEFORE adding the potatoes. Too much whisking will make an emulsion - not what you want.
- NEVER ADD the OIL to the mix. It changes the structure, especially if it's boiling hot.
- Start with a strong fire to seal the base, take it to a minimum so it doesn't burn on the outside, and remains juicy on the inside. Too much heat will create bubbles.
- Don't wait for the upper side to be cooked to flip your tortilla.
- Don't use a dish to flip your tortilla. Use the lid and wet it with water before. You get a safer grip and an easy slide. Most tortillas get killed at this stage.
- Turn the heat up to seal, give it a couple minutes and remove it so it doesn't overcook.

Well, actually spanish people is divided and our tortilla is always controversial. While some people hate onions inside others do like them there. I personally don't like the spanish tortilla with onions cuz then there is no taste but onions. Others versions around Spain add bell peppers (usually green ones and fried before adding to the tortilla) or spanish chorizo, which adds a spicy taste. Greetings from Seville.
