I love how down-to-earth this video is; like I just moved into the neighborhood and you invited me in for coffee, pie, friendly conversation and made me feel welcome. Wonderful video!

I'm with you I sterilize my jars. I also warm my rings and lids even though it's not required anymore. I learned from my Mom and Grandma so I stick with the old school method as an extra precaution.

I was happy to stop warming the lids but I did for a while after it changed 😂

@@FermentedHomestead I know it can be a hassle but I just can't shake it off my routine i guess it has to do with my OCD.

They seal better heating the lids and rings. I hardly ever have a lid failure.

Another thing, I use the sauce in place of half the butter in banana bread and it turns out lovely.

That looks good! I like to use sugar free applesauce as a substitute for oil in cake mixes. I always get compliments on how moist they are. Tfs!!

I can’t wait to get some apples! I am new to canning so figured that applesauce would be a good and easy thing to start with! It’s also one of my favorite things to eat so I would rather make it myself and know exactly what’s in it instead of buying it at the store.

Enjoyed the video. I'll have to look around for the book. I like well organized simple books for canning too. Btw, you made me so hungry for homemade applesauce! I could almost smell it cooking, yum.
I grew up canning applesauce with my Mom. She always used Gravensteins which never needed sugar at all and made excellent sauce. Still my favorite. ❤

Good video! Just a note...the bottom of your green funnel sits perfectly on top of the 1" headspace line. :)

Do you not have to add lemon or vinegar to the jar before canning?

I was watching this video while preparing to can applesauce in my steam canner. Last year my applesauce all siphoned and made a huge mess, i refrigerated it for a few days and then ended up tossing it. So, here I go again. The first 8 pints finished and did some siphoning. My last 3 pints are in the canner now. I added a tad more headspace and have the heat on the steam canner a bit lower and checking to be sure the gauge stays in the proper zone. The first jars cooling on the counter look as though they have sealed although I heard no pinging. I am using Ball and ForJar lids. I am wondering how I can have a good seal sine there must be sticky reside on the jar rims due to siphoning. I am a nervous canner since I have only done applesauce, tomatoes and jams and lots of time passes before next canning session. Do you think leaving more headspace is ok, maybe my sauce is too thick or maybe steam canner was boiling to hard. So many variables. Thank you in advance for any tips you may offer.

You add lemon juice or acid to keep them from turning brown. And the canning books tell you to water bath it. Always make my applesauce and pear sauce without sugar. That way I can use it to bake with. And I just add some sugar to taste when I just eat it.
