Sage Barista Pro - My Morning Coffee Routine

  • After 14 months of using my Sage Barista Pro, I'm showing my morning coffee routine preparing my favourite coffee drink. A flat white.
    It takes me a total of ca. 5 minutes from turning the coffee machine on to enjoying my drink, leaving a clean table top and have everything ready for the next coffee session.
    For details on the used utensils and consumables got to min 5:30.
    The average number of drinks that I prepare during the week is 21 (three a day). In the morning one double cappuccino (or flat white) and one cafe latte (for my wife) and for the afternoon fix one cafe macchiato (double shot).
    So in 14 months a total of +/- 1176 drinks have been prepared with this machine not including the drinks for the regular friends visits.

    Great video. i love mine. One thing i do differently, is steam the milk first so the coffee isnt sitting too long. then i can swirl my milk while its extracting

      Yes I do this as well. I think this also increases the shot temperature by steaming the milk first. )

    I was told that it's better to steam the milk first to have it ready for pouring in the espresso because it's not good to have the espresso sitting around after pouring it. Your final result looks AMAZING though😁

    Thank you for showing us how to use this machine. Was wondering if I use filtered water in the tank, do I still have to change the filter every 2 months? Is the filter more more people using tap water?

    I am about to buy one of this. I am hurt for ruining a part of my Icoffee spin brew machine that i have owned for the past 3 yrst at least. The unit have been working fine but i tried to do something to clean it. Instead of pouring a decaler solution as usual. And i broke the part that drips back to the reservoir. Devastaded because never gave me performance problems. Even tho ICoffee is no longer on the market. Remington used to make them. But anyways i am considering buying one of these machines and learn how to make this type of coffee with the leaf. But i have an important question. I dont like to drink raw coffe or with zero sugar. Is it possible to make it with a sweetener, without ruining the leaf?. Whats the option for those u likes a sweet hot drink?. Should i add sugar after the brew?. Disolve the surgar in the coffee and then at the froth milk???

    I am trying to do single shot americano. Any suggestion in the brew time? My current settings are 4 for upper ginder, 10 in the external grinder.

    I wish I had bought the (Breville Barista pro U.S.) when it was on sale $700.00, but it was easier to talk wife into the Breville Barista Express for $600.00, you can adjust temp and the pro steams a lot better then the Express because of new thermocoil plus more grinder adjustments on grinder , plus screen gives a more positive indication then blinking lights :)

      @@Slobberbutt1 I meant to say it's easier to adjust water temp, the BBE is great machine, pretty easy to use plus the IMS shower screen doesn't fit the pro and does fit the BBE, also I've talk to a to a few people that say if you upgrade to a better grinder make a difference in your coffee because the grind is much better, saving money now for grinder :) Thanks for your remark, I like info from everyone :)

      You must whait 25 minutes whit rocket appartmeno no go for home use . I have sam marco 95 series greath espresso but whait 15 20 minutes for heating it is pain

    Could it be that the opening of the can is essentially for latte art?
    Cause mine is more pointy and the cream doesn't spread on the surface
    It stays thin or actually disappears

    Hi, did you adjust the upper burr in the grinder due to wear / break in, or just found that that is a better setting by default ? I've seen a few people adjust it out of the box.

      After some time I found that with the same beans that I normaly use and the same procedure that I have (coffee quantity, tamping preasure, etc) there was a considerable reduction of brewing time of around four seconds and the flavor was not as good as bevore. I noticed it gradually and then decided to adjust (deacrease) the upper burr by two steps. After that the brewing time became to my normal (around 25 to 30 secs) an the tasted improved as well. I don´t know if the main reaon was burr wear or loosening of the mill components.

    Ich möchte mir auch eine Sage zulegen und überlege gerade ob ich mir die Barista Express oder die Pro holen soll. Es gibt ja mittlerweile auch welche mit Touchscreen, soweit ich weiß.. Welche eignet sich denn am besten für einen Anfänger?

      Die Pro ist eine super Maschine. Meine Frau, die keine Erfahrung als Barista hatte und nur mit Nespresso Kapseln Kaffee mache konnte, kann jetzt super Latte Macchiatos für sie und ihre Freundinnen vorbereiten. Ich muss ehrlich sagen, dass du am Anfang viel Übung und Geduld brauchst aber am Ende lohnt sich alles!!!

      Ir comes only with one portafilter but with four baskets. Tow unpressurized (single and double shot) and two pressurized (single and double shot). I always use the double unpressurized even when I make single shot coffees ( too lazy to change baskets and the taste doesn’t change).
      You would do ok without buying extra items but I would really recommend to buy a proper tamper and tamper mat.

    how did you change the setting of time to dose the water? For double shot in your video the water is pumped for 24sec. On my machine it is way shorter, how to change that?

      Hi Don, thanks for you comment. In order to remove the water tank you need to have a fair amount of space above the machine (the height of the tank around 25 cm) but the machine is not too heavy so you can move it quite easily. Otherwise you can fill the tank with an extendable water hose without removing the tank since the top lid can be opened without removing the tank. As per the bean container, you wouldn’t have any issues with the low wall units. Cheers, René

      Hi Mark, this a great machine and its grinder is ok regarding the quality of the ground coffee BUT the grinder is loud!!! Whenever I am preparing my afternoon shot and my son is taking his nap upstairs I need to close the kitchen’s and the bedroom’s door if I want to have a quiet moment for myself while drinking my coffee and not having to run upstairs and get my crying son. As per the grinding time it takes around 15 secs for 18 gr. Cheers, René

    Would anyone be willing to help me here? I have the exact same machine and have set my upper burr to 4. I use 19g of beans grind each single dose alone. To get a 25-30 second shot, I have my grind setting at about 20. This seems to result in very weak espresso, but when I grind finer the shots take closer to 50-60 seconds to finish, or don't pour from the machine at all. What could I be adjusting to fix this?

      Hallo Hugo, die Maschine ist sehr zu empfehlen und mehr, weil du die sehr günstig und neu finden kannst. Ich habe die über Euronics XXL bei Ulm online gekauft. Sie hat damals 555€ gekostet. Vielleicht findest du ja was günstigeres.

      Sorry I can’t. Just sold this machine and upgraded it with a Giotto Rocket Espresso. Try keeping all variables constant (coffee beans, tamping pressure, temperature, espresso volume, etc) and just play with the grinding coarseness dial. Cheers

    Have you ever made two drinks back to back? I am wondering about the 'recharge' time to get the temperature down from the higher steaming temp to brewing temp... once steaming is done, do you have an estimate on how it takes until you can pull another shot thats not burned? thx!

      Hi Philip, sure I did making drinks for my wife and me every morning and for more people when friends came over for coffee at home. This machine has been replaced with a Rocket Giotto now though. I didn’t have any issue with the temperatures. The only issue was the long time steaming for more than one drink the same time. But pulling a shot after steaming did not have any noticeable flavor change. Cheers

      If you're making 2 coffees, pull 2 shots and then steam the milk for 2 coffees.

    Have you ever used Illy or Lavazza beans? I just got this machine and am having difficulty dialing it in.

      Hi Brian, yes I tried the Lavazza beans but I was also not able to dial in the machine with them. It was very frustrating. I realized that it had to do with how far back the beans were roasted. The older the roast date the brittler the beans were, hence I had to set up the mill very fine around 3 to 6 in order to get a proper extraction but by no means the expresso tasted good but bitter. That is why I only buy freshly roasted local beans of the same sort that were roasted between 7 to max 20 days back. In this way I know my settings and depending on the roast date I just go up or down one or max two steps on the mill.

      Same for me - was told the solution always buy the freshest roasted beans with roasted date printed on the side - illy lavazza never give this date only the “use by” so beans could be months old - then the “dual wall” basket must be used to give some rsort of crema. Will not work with the single wall basket that’s for fresh beans only / good luck ☕️

    18gr. = 36 milliliters for one coffee right? Or rather double the amount so 72 ml?
    I can't get 36ml of coffee out of the 18gr. Tips?

      It is not convenient if you measure all in gr. 18gr in 36 gr out.
      By measuring in ml, it is more difficult to consider the crema that builds right after making the shot.

    Im already at grind size 8 and still the cinsistency auf espresso is to liquid
    I don't even think its the grind size cause if I lower it even more its still the same consistency but the jet ist thinner
    Any tips on how to get that creamy consistency?

      First of all make sure you are using fresh beans (roasted date no longer than 20 days). Then make sure that you are grinding the right amount of coffee (around 17 to 19) and you are tamping it strong enough ( around 20 kg of pressure). The rest will come. Good luck

      Hi Constantin,
      leider ist der Barista Pro nicht für seine super dampfende Kraft bekannt.
      Wenn ich drei große Cappuccini mache (jeweils doppelter Espresso auf einer großen Espressotasse wie in diesem Video), mache ich sie immer einzeln; Ich mache den doppelten Espresso und dampfe die Milch für jeweils eine Tasse. Dies nimmt viel Zeit in Anspruch, da diese Maschine keine Doppelkreispumpe hat. Du muss also warten, bis der Espresso-Zyklus beendet ist, bis du die Milch dämpfen kannst.
      Wenn du mehrere kleine Cappuccini (einzelner Espresso in kleinen Kaffeetassen) machen möchtest, kannst du einen doppelten Expresso-Schuss mit einem doppelten Spross extrahieren und die Milch dann in einem großen 750-ml-Kännchen dämpfen. Denk jedoch daran, dass aufgrund des wachsenden Schaums, der das Glas füllt, nur etwa 400 ml Milch gedampft werden können.
      Dies sind meine ca. Zeiten, um meine Milch zu schäumen:
      400 ml in einem großen Kännchen (für einen großen Caffe Latte oder zwei kleine Cappuccini) -> 1:20 Minuten
      300 ml in einem kleinen Kännchen(für einen großen Cappuccino) -> 40 sec
      200 ml in einem kleinen Kännchen(für einen kleinen Cappuccino) -> 30 sec
      Wenn ich zu Hause mehrere Gäste habe, die Kaffee trinken möchten, nehme ich mir einfach Zeit, bringe sie in die Küche, unterhalte mich mit ihnen und genieße ich einfach den Prozess der Kaffeezubereitung.
      Wenn für dich die Zeit sehr wichtig ist, würde ich dann eine Rocket Giotto oder Mozzafiato Kaffeemaschine empfehlen.

    Hi, I always use 12oz(340ml) cups what size of jug should I get (was thinking of getting a 20oz (600ml) jug ) and do you think a bigger jug would work with this machine for the milk/latte art?

    did you program the preinfusion time? how do you get it to pour at 11 seconds?

      No I didn’t and I don’t know if you can program it.
      I’ve observed that my pre infusion times vary depending on how coarse the coffee is or how hard I tamp it. I guess it depends on the pressure resistance of the tamped coffee.

      Pre infusion will also depend on the distance between the puck and the group head when you attach the PF, I notice you don’t use the razor?

      I would recommend a blend from your local rosters. In this way you support your local business and you always have fresh beans whenever you need!

I read that, from other users, the espresso shot is cold, not worm enough as it should be. Is it true or false? Can you give me your feedback because I am ready to buy one!       Hi, thanks for your comment. As you may know, there is a programmable option to adjust the shot temperature from "cooler" to "hotter". I read somewhere that the factory setting (middle point) temperature for an in cup espresso shot was about 80°C. I set it at the hotter end but I don´t know what is the espresso temperature at this setting. Do I really care? No, I don´t. What I care about is that I really enjoy drinking my espressos or flat whites that I produce with this machine and to be honest, my drinks are better than 90% of the ones I dink in coffee shops. Nevertheless, one way of increasing or at least maintain the espresso shot temperature as much as possible is to make blind shots to heat up the head and the internal machine ducts and heat up your coffee cup with the blind shot water or the water from the hot water spout before preparing your drink. I hope this helps. As a side note, I will probably get me a Rocket Espresso Giotto Cronometro for Christmas, this machine will not have the temp. issue ;) Cheers, René

      @@tremec33 HI René, Thank you for your feedback! I bought the machine 2 weeks ago and it's brilliant! I love it! Nothing to do with the delonghis thing.. It's pure coffee and I believe also that's the coffee it's even better than the coffee shops out there..! 😉 As for the Rocket, I believe that it is the ultimate option for a passionist! But a little bit expensive for me at the time... In the future, why not! I'm expecting to see your new video of new machine, if it's the case! Happy holidays!

      Of you mean pre infusion time, I don’t think you can set this on this machine. I’ve observed that my pre infusion times vary depending on how coarse the coffee is or how hard I tamp it. I guess it depends on the pressure resistance of the tamped coffee.

      @@dgerson76 I would always make the espresso first and then foam the milk, otherwise the milk foam won't be as silky and hot once you drink your drink. If I am making a cappuccino, flat white or espresso macchiato, I always pour the shot durectly in the coup first.
      But if I am making a latte macchiato in a long glass, I make the espresso first (pour it in a previously heated shot glass) afterwards I foam the milk. I then pour the milk in the long glass and on top of that I pour the espresso shot in a quickly manner, so that the coffee is on top of the milk but below the foam having three nice layers for a nice latte presentation. I will make a video preparing a latte macchiato in the future. I hope this helps.

    i think your brew time is only 13 sec..1st 11 sec is pre-infusion and the rest is the actual brew time. I start my timer once the 1st drop of espresso hits the cup.

    Safe need to do better with failing in instructions! I have burned through a big bag of beans to dial this in! It should come with a warning. I am a competent barista worked for Starbucks and Costa for years and I still had a difficult time getting a Honey texture out of this thing. You shouldn’t have to buy external kit to dial this in.
    As a consumer product it is not that user friendly to set up. Luckily I have experience so I was able to achieve honey like texture from my extraction, but if I had no exp. This would have been a pain in the arse, and I probably would have got a refund.
