I made these two weeks ago, a little more work than I'm used to, but sooooo worth it. My first but definitely not last time making these.....soooo yummy and even better the next day. I was going to do the red next, but decided to do your chilaquiles next. Thank you so much for your channel, I m having such a wonderful time trying your recipes. Stay healthy
I have absolutely fallen in love with your channel. I wasn't familiar with mexican cuisine and you have opened up a whole new world for me and my family!
You are doing an awesome job! Thank you so much. Your videos are great. And I'm looking forward to you having them done professionally... You deserve it!!!
I made this with spinach tortillas, but I baked them with vegan cheese in oven. Omg sooooooo goood & the sauce was bomb!!! You changed my jackfruit game 😂 lol
HELP Where can I find canned jackfruit I just came across your channel and I’m so glad I did we’ve been off meat for a few months and I’m missing Mexican food so bad I’m ready to try ALLLL your dishes 😋
THIS WAS SO DARN GOOD! I am from Southern California and I now live in the South. It's hard to find good Mexican food so I'm always looking for great recipes so I can make my favorite food myself. This one knocked it out the park! Keep 'em coming. You're giving me life. BTW, I now can keep fresh salsas in my fridge at all times (cuz I eat them with everything - just like home). ❤️
Traditionally we make them “to order” but you can definitely bake them if you add some vegan shredded cheese or if you want to make a lot at once & have them be warm to serve them family style! Up to you 💕💕 I do it sometimes! then add the lettuce when it comes out the oven hehe
No! Traditionally they are served to “order” really hot & don’t need to be put in the oven because the sauce is super hot and the tortillas are usually pan fried. 🧡 BUT putting them in the oven is helpful when you have multiple people or if you want to melt some vegan cheese on top & you can just grab them out when serving! Also saves your fingers because the traditional way can burn 😂 Much love xoxo
I just found my new favorite youtuber! The blue plate was a good choice, by the way. Your food looks delicious and amazing! I haven't had good enchiladas since I went vegan, and I miss them! I will definitely have to attempt to make these. Thank you for the jackfruit tutorial as well. I had no idea what to do with that stuff. Fantastic video!
You should make a vegan menudo. I'm not vegan, but I like the idea of making something I like when I don't actually have the ingredients for it. (Example: I ran out of eggs, but I want to make brownies, or cookies, or pancakes, etc.) Plus, I think it brings out the creativity in cooking. Also, I want to trick my husband into thinking he's eating meat. I have only succeeded with deserts or sweets (as you can tell in my examples), but I'm hopeful my day of actually making him believe he's eating meat when he's not will come pretty soon.😉
Wow girl you rock.. I'm new to your channel. Thank you so much for your hard work. I'm really new at this... I made your quesabirria tacos...it was a hit.
I love the birria taco's. I made them for my family and it's definitely was something they request often now. I look forward to making this as well. I hope that you continue to make videos.
Brittney Vargas Thank you so much. Wow that’s awesome, I’m overjoyed that you and your family loved them! Thank you for the support & yes I will continue to make videos 💖✨
I had to show off you channel to my family!!!😍💕😁 we really did not know mexican food could be VEGAN you just proved everybody wrong!!!!🌱You have insipred me so much to continue this new lifestyle!! Thank you for all your delicious Mexican mouth watering recipes!!! I look forward on trying them. You are absolutely the Queen Of Mexican Vegan Food🌠✨💕
I just found your channel randomly and glad I did . I really like that you are doing vegan Mexican foods . Would love to see vegan tortas ahogadas and ceviche ( usually make it with TVP or hearts of palm) . Also I also loved your queso fresco recipe 😊. Will totally make it to it eat with my frijoles de la olla .
Yay! Happy you came across it 🥰 & Thank you for the suggestions. I will add it to my lists of recipes I need to perfect & film! And yes, definitely lose the queso con unos frijoles hehe ✨
Hiii! I’m binging your channel right now, it’s a masterpiece 😩🙏🏼 I’m not Mexican and I’m not informed on how enchiladas are prepared traditionally! I’m sure the way you did is the way lol. I’ve seen videos though where people bake them in the oven! How do you feel about that?! Lol I’m just curious, I may try both methods. These look AMAZING
Hiiii! So the most traditional way is shallow frying your tortillas in oil then coating them in the sauce so it sticks well. I usually do a tiny bit of oil as seen in the video. & Yes enchiladas are traditionally served to order like seen in the video! BUUUUT baking them, although not traditional is a great way too. You can do everything I did but also place them in a baking dish & bake for 10-15 minutes at 350. Baking them works well when you’re serving many & you want everything to be hot so you can eat together. It’s also good to add some vegan cheese on top so it melts 🖤 Whatever works for you! Thank you for your comment 🥰🥰
I wouldn’t say exactly like chicken, I feel like jackfruit is more of a vessel for flavor. The texture is there! But it’s all on the flavorings you add really 💕
We did the birria last night btw it was good af, again if you can do dubs I think it’ll open you up to more audiences and help out the native speakers to transition as well 🙏🏾
Simple and delicious is always welcome!!😊

Looks so good! So no baking them before adding the toppings?

Does the texture not change much when you leave the seeds and stem on?
Looks amazing! What kind of knife is that? Looks awesome!

Thank you so much 💛 That truly brings me joy. I hope today goes great for you. Sending you a hug! ✨
Once you roll them up, do you put them in the oven or microwave, or are they ready to serve at that point?
Jack fruit fresh taste better as a fruit. Canned is better for cooked dishes that my experience.
100%! Canned is great for shredded textured “meat” & fresh is delicious enjoyed as a fruit 🥰
