I've been racking my brain for months trying to find a new business, change of direction. I love cooking and I'm known for it in family circles, however I guess I'll need more than that. I'm based in Paris, France so I know the dynamics will be hugely different. Thanks for this video which gives me hope. And reality!

I've eaten at food carts in many cities, never had a problem. They get fresh deliveries throughout the day. I have seen more dirty food trucks than carts. Just because someone has a $60K mobile kitchen truck does not guarantee high sanitary standards. I wish you could experience one of the little potato carts in Mazatlan, Mexico. They fire roast large potatoes and have many great topping and grill fresh meats & fish too. They operate all night and sell hundreds of meals each night.

Hey does anyone know of a food truck/trailer that provides catering style ? Not sure if I'm correct but when I think of catering I think of food that was prepared in one location and served at another. I am looking to have the food cooked at a commissary kitchen, place in warmer that is located in the food trailer, and serve the food this way. Is this possible? I mean I see tons of restaurants serve food this way in NYC like Dominican or Jamaican restaurants. Also I see Canteen lunch trucks serving cooked food out the back that I know was prepared some place else. Thanks in advance, Louis.
I completely agree with your statement. I refuse to purchase food in my country from food carts, due to lack of food safety issues (hygiene, conservation etc), food trucks usually offer less risks. For example, in a food truck, cooks and food itself are more isolated from customers than compared to a food cart on a sidewalk, where anyone with a flu or any other air-transmissible disease can contaminate the entire food. A food truck also offers more storaging room than a cart.
if you can get a food truck get it. You drive everywhere and just pull up and serve where you can find a good spot. A cart needs loading and unloading and really more physical labor than a truck. To customers trucks are more presentable for some reason. its a mobile fast food restaurant that you can have running refrigerators and not just cold storage units. costs will be higher in a truck but you'll make a lot more $ also
Dkouts57 I agree with everything you said except the part about the labor involved about the cart. The cart is less work where as my food truck is more labor intensive because you have to load the truck and the workspace is limited.

Im half way thru this video and what Im hearing is just war stories about how they run their trucks. Funny how the guy that makes cupcakes says not to make burgers. I can say the same about cupcakes "how many ways can you redo a cupcake?" Im looking for more of a check list on how to get started. ie: Permits, Commissary kitchens, etc

Hi every one, We just got a location to put a food truck , I don't have a food truck yet ,i checked Kijiji for a use one ,for now.But i don't want to spend money to buy it but is not pass governments testes so i decided to buy a new one iam living Toronto Ontario ,if you can build a trilar or truck 24 to 26 ft for chpice and burger . Most of the companies are located U S A, If you can bulid at Toronto let me know please.

Just heard about this group very interested as I am a lover of vendor industry have done it for years. ...mobile coffee cafe. ..churches. outdoor events.parks and the State Fair. ENJOY the climate....
you should spend $200k on a food truck gourmet or otherwise. ps don't do anything other than a cummings turbo diesel with an allison automatic transmission with as many foward speeds as possible with as long a bed as possible. gasonline engines are fuel hogs and highly unreliable. you should then spend another $25k on maintenance before even building it out.

Here in Texas it's about $2000.00 for the different licenses, insurance and fees. That does not include inventory.
