Sacrifice was at the time of Jesus' death, and at the time of the old testament being written, a symbol of giving something in return to being blessed or forgiven for sin. But it also highlights something important; that you dont need to "do anything" to gain gods mercy, as the sacrifice (Jesus' crucifixion) had already been made, meaning all you need to do is believe in god, or accept his mercy. But to directly answer your question: No, Jesus didnt 'need' to die for our sins to be forgiven, but it is a powerful symbolism first of all saying all your sins will be forgiven if you acknowledge Jesus died, but also showing the great love of God, and how he will even sacrifice his own son for humanity. Jesus' death was a part of Gods divine plan for redemption. It's not about necessity in a practical sense but about fulfilling divine justice and demonstrating love. Regarding you second question, no God doesnt inherently die.
