I would not take the seat out like that if you want to re-use that seat retainer. You can see at 6:00 the scratches that it made on the inside of the hole. Use a tap, screw it into the seat a turn or two and pull, no damage except for the seat which your probably going to replace anyway.
You are right, but this is just an Video to show how dissemble such regulators and how many materials are inside. Seat, sealing and stem should replaced every time when the regulator is open like that. If you need more details please contact Tescom also regarding all torque!
