  • Before machine-made banh trang became popular, my aunt, Di Yen, and cousin, Trinh, produced rice paper in Viet Nam by hand and sold it locally in their town just north of Saigon. On my last visit back, I asked them to show me how they used to make it. They prepared a special batch from stone-ground, whole-grain red rice. Rice bran, stored in that big metal drum, drops down to fuel an earthen stove. Gently steaming water rises through tightly stretched cloth and cooks the very thin, smooth rice batter in seconds. My cousin, who hasn't done this for a year, still remembers the rhythmic choreography of stirring, ladling, spreading, rolling and unrolling. Of course, she makes it all look so easy!
    Each mat, as it's covered by still warm and wet banh trang, is arranged in the sun so that the rice paper can dry completely into the delicate, translucent rounds that we love so much. Look closely and you might notice that the roller is covered with the leg fabric from an old pair of jeans.

    What a nice video. I could spend hours watching them doing that. Actually, it would be awesome to give it a try and make our own rice paper using this method.

      It’s actually a super manual process, even collecting the rice, and drying it in the sun, etc. great video..! I also didn’t know about the cooking process- just the harvesting of rice I have seen in person is very labour intensive

    This process is eminently suitable to automation.

    I tried to make this at home which is a failure, i used a cotton cloth for its steamer, the rice enamel sticks to the cloth. The water was already boiling when i put the rice into steamer. Maybe i should use sticky rice than the ordinary rice

    Ok so there's a pot of boiling water then the covered the pot with tight cloths ? Then put a metal plate on it and poor the grounded up rice with water mixture on it and the steam cooks it and then the get a roller that's covered with cloth to pick it up and put it on a stick mat ??

    This is awesome I can appreciate the Vietnamese way of life these people always look full of joy but yet here in the states we have 4000 sq ft houses with all the toys and most of us are unthankful how ironic however I eat PHO atleast twice a week and if I could would love to live in Vietnam..👍🏻❤️🇺🇸

    It is, isn't it. The job of making rice paper pays so little, often a job that goes well on for hours of hunched back pain.

    OK, Call me a fool and stupid but it is just ignorance on my part. Is Rice paper for writing on or is a food. I am sorry if this such a stupid question but I seriously don't know.

      you probably have it by now but its: Rice soaked in water for ~ 8 hours. Washed 3 times then one cup of the soaked rice and one cup of clean water put in a blender (blitz) until smooth.

    How do they make the dough? is there any recipe? or is it an international secret, cause i didn't find it anywhere on the internet !

      It's rare to find recipes in English, because it's a very difficult technique that takes years of practice, and the unpublished methods were handed down in families. Even in VN, you'd go to your local rice-paper maker rather than make them at home (similar to a neighborhood tortilleria in Mexico). Now, even the vast majority of folks in VN buy the commercially produced packages. That said: you can try following the recipe shared here ua-cam.com/video/EQBCNxN_WbY/v-deo.html. It's the best description that I've found in English. It's meant for the rounds served while still moist, but by drying the rounds on bamboo screens, you can achieve homemade rice paper. Heads up: it's an extremely difficult process that happens over several days (e.g. my family's batter above took 2 days for soaking and grinding) -- simple in theory but with lots of detailed finessing that requires instinct and experience.

      For rice paper rolls, you can put anything like cucumber, carrot, capsicum, scallion, chicken, steak and anything your heart desires

      seems this rice paper is of use for food like spring rolls, some other varieties are for art or writing, i you heard what was asked at the end you would hear them ask if it is for food and the women making it answered with a yes and few words pertaining to spring roll in their language

      you probably have it by now but its: Rice soaked in water for ~ 8 hours. Washed 3 times then one cup of the soaked rice and one cup of clean water put in a blender (blitz) until smooth. Simple as that.

      P Kaur In Vietnamese cuisine, they use it to make fresh rolls and fried spring rolls. I'm sure there are other uses for them

      also for use of rolling papers that are so thin you need a machine to roll them (no ash when smoked from the papers but it's what you put inside*) and no after taste* like other brands including raw branded papers... this is claimed on the package of the **rice papers** and they look exactly like these just cut down to size. wow beautiful and exotic.

      I wouldn't say pancakes but we use rice paper to make "rolls" that are filled with for example herbs, pork, prawns, noodles, etc.

    HA HA HA " melt rice", it is rice flour with water or whole rice with water in the grinder ,( or a blender, need to soak over night)
