Greetings, from Sweden, Mr Paul. I'm an expat lad with a Yorkshire/Derbyshire heritage. Since I started making your Yorkshire Pride seasoning and making sausages (and sausage rolls) to your sausage meat recipe, they have become a firm favourite (the locals here love them). I also use the same recipe and seasoning to make a delicious Midlands favourite of pork and tomato sausage. The only difference is that instead of 300g of water, I replace it with 350g of a good tomato passata (Cireo is my favourite) together with 3g of bicarbonate of soda to balance the acidity of the passata. These are also a winner and make scrumptious sausages, sausage patties and sausage rolls. All your seasonings are now in my cookery book and are my first go-to when making sausages.👍🏻

Thanks so much. Best sausage rolls I've ever made! And I've had plenty of cracks at it over the years. Just tasted them a few minutes ago. Delicious! I'm very indebted to you. (Love your many English recipes. There's a gap in the market for them which you're very successfully filling.) The pork belly is just right for the sausage rolls and so are your spice combinations. I used the first one - the Yorkshire Pride. I usually egg wash the ends to prevent the filling seeping out. I was a bit sceptical ... but with your mix there was no need for that. They were a fraction salty and I'd like a little more pepper but that's easy to adjust. The salt is probably to do with the pastry I used and the fact I use melted butter I brush on the pastry just as it starts to rise. I wait till that cooks a bit before I put the egg wash on. I usually have two quick applications of egg wash -waiting for the first one to dry before the second. The melted better is a little trick I use to improve commercially bought pastry. I find it works so well to improve the quality of the pastry. Now this may sound a little heretical but it works for me. Even more heretical ... I use this melted butter approach along with an egg wash on frozen pies. Amazing what a difference it makes. Thank you so much Mr Paul. This is the best recipe in my opinion of sausage rolls, adding bread crumbs a the reasons for it I wasn’t aware of thank you Mr Paul I will certainly be using the method! 🌟🌟🌟🌟🌟 One point of observation is that I think the last YT software up grade has caused your recipes to disappear from under the videos.

Looks lovely Mr. Paul. sometimes i have sausage meat left over, so i add a little chicken seasoning and maple syrup and form into patties, cook it through and have it nice and hot in a buttered roll xx

👍. I'll try pork belly. I'm a sausage meat person.. I agree it is processed , 😧but I add caramelised onions , bread crumb, curry powder, sage , mustard , ..as you say...do what you want., And your folding style... yes I'm a roll under , but yours looks ok 😂 My top tip, from a conscience perspective ,Make your own puff ,....if you don't, you're just an assembler. 💡 Thanks for pork belly tip 👍✅.
Hi Bill, many thanks for your feedback, however, after 60 years of making tons puff pasty (50+ kilos per day) in my bakery and now living alone, buying a block of all butter puff pastry does not prevent me sleeping at night. Plus many people would not bother to try a recipe if I insisted they made their own, it's all about getting people to try things. I wish you a very Merry Christmas and a Healthy New Year.

My grandmother made something similar but we called them pigs in a blanket. She used sausage links or on a tight budget frankfurters wrapped in biscuit/ bread dough. One of my favorites with her macaroni and cheese. These look lovely.

Hello Iris, yes by all means use longaniza fresca, it's a very tasty Castilian sausage which unfortunately I can't get easily where I am in Spain
