10 Tomatillos (roasted)
1-2 Cloves of garlic (roasted)
20 Chile de Arbol (destemmed and roasted)
3 Chile Pulla (destemmed and roasted)
3 Chile Guajillo (destemmed, deseeded and roasted)
1-1.5 Cup of water
Salt to taste
Blend all ingredients and let rest.
ENJOY!!!
(Note: deseed the arbol and pulla too?)

You only deseed the dehydrated ones, cause the seed make everythig sour, chiles de árbol they just dry, also tomatillos you only cook them for 5 mins or the also get sour
Yes, agree that the Arbol chilis need not be seeded... And I find the pureed tomatillos can be a little gummy... Adjusting the water seems to take care of this... My blender is a little smaller than shown in the video but I wouldn't start with more than 6 Arbol chilis... You can always add more but 10-20 might rip your lips off...
I only used 5 arbol. Perfect kick of spice for me!

Here are the adjustments I made...
Cut Chile de Arbol amount in half, those are scorching hot
Doubled Chile Pulla - great taste I did not find them hot
Used SPG but took more than I expected, homemade found recipe on line.
1/4 white onion grilled
3/4 to 1 tsp of sugar, this cuts bitterness, go slow
blend the tar out of it.
I'm going to let it set in frig for several days, will get better with time, be patient...

And most of these shopping center so called Mexican resturants the salsa even Sucks because the open a can of tomato sauce and serve it to the gringos no salt no pepper that's it , tomato in a can.

I swapped chili de Arbil for chili Japones recently and it seemed way spicier . Japones are pretty spicy too

Chile Puya is hard to find for me. Chile de Arbol and Chile guajillo I can get. This salsa sounds so good!
Just made this AWESOME salsa! The heat is Caliente, but it levels off and it's a good heat. I'm Italiano so I used 5 cloves of garlic. Next time I'm going to use some ice cubes when blending because I like my salsa cold and I did not have time to chill it. Thank you Arnie!
Thanks ArnieTex. I started making my own fresh salsas recently and using dried peppers for marinaides rather than bottled ground products.
Even made my own Carnitas and used the marinaide as a base for a salsa Roja.
Mexican style food doesnt get enough credit for being healthy and low calorie as it does for being delicious.

Sir, that there looks like the salsa from Lone Wolf Cafe in Pasadena, Texas that went out of business about 25 years ago. The chef actually wrote the ingredients for me on a napkin and I sadly lost the recipe when we moved to a different apartment. It was the absolute BEST salsa roja I've ever had. I can't wait to try this because I have been looking for the recipe ever since.
Over the weekend I roasted some tomatoes over some mesquite and then added some chili tepins and some cilantro, it was banging! Like you said salsa is just what you have

I would recommend taking out the seed as you take out the heat from the salsa. Reason know my dad was a Chile farmer in Hatch Nm.

This looks so good, every video I've seen of yours is the same quality. Subscribed for sure. Question, would you ever use like a vegetable stock instead of water when thinning it out? I've been doing that in any recipes calling for water. Figure stock/broth just means more flavor and brings the same hydration. Lemme know! Your videos are great.

I've tried humble house's puya and pasilla sauce, and didn't care for it. It had a weird aftertaste. I prefer their guajillo and red jalapeno sauce. I'll have to try making this

That chile puya is similar to guajillos.. They have a more fruity, earthier taste to them... I'll be trying this recipe manana... I have used chiles del arbol along with other citrus fruits as a brine for large chunks of game meat... Covers the gameyness, tenderizes and brings out a whole new flavor in the meat.

The older I've gotten the more I like the thin cut steaks for their ease of cooking and flavor. When all the other stuff is included, the thin cut is plenty beef.

Try the birds eye salsa it's really good has a smokey toasted flavor The only thing is the bird's eye chiliz sometimes are kinda hard to find

@@ladzerty If fresh Tomatillo is not available at your local market try using a canned variety which can also be roasted.
Give it a try would be my recommendation. While not the same I even have a hard time finding tamatillos sometimes in the US

There is a taqueria near me that has this salsa like I've never had before. Super garlicy. Been to most the taquerias. This one salsa is off the chain. I get to pint everytime I go. Wife and I kill it

How would you adjust for a smaller serving? Since it’s only for two and typically we can’t really store those sauces for more than 1 weeks
How would you do this for 2 people
