When I make this for myself, I use the whole head of garlic...next day people complain I smell like garlic, but no mosquitoes bother me either...win-win!
One of my great take aways from living in Italy for a couple years was the simplicity of the cuisine. Italians create some of the most delicious dishes with very basic ingredients. I love it!
we've been a poor country for centuries, but our land produces great ingredients. So, even if we had little to nothing, we did our best to make great food with the little we had
This one doesn't seem very nutritious though. But as the other Italian commentor said though, they made do with what they had when they were a poor country.
@@dannnsss8034 Protein is what is missing here nutritionally. Extra virgin olive oil provides healthy fat and polyphenols, and pasta provides carbohydrates with a little bit of incomplete proteins. I think adding meat to the side would solve all what is missing in terms of nutrition.

This weekend I have been cooking your recipes and they’ve been the best pastas I’ve ever had! On Friday I made carbonara with lots of black pepper, on Saturday I made arancini and spaghetti cacio e pepe and today a very simple spaghetti aglio e olio. I love this recipe. I’ve been making this with 3/4 EVOO, 1/4 butter, sliced garlic , spaghetti pasta, and top with parsley. I didn’t know the parsley’s flavor was in the stems, ( I’ve been throwing them away for years), some learn something new everyone. ❤️❗️

Luke, this is a brilliant pasta dish, simple and tasty. Next time when you do it, try to use thinner pasta like capellini or spaghettini instead of spaghetti. In my opinion it's even better. Vincenzo might agree as well. Great channel!!!

I grew up with friends whose family came from Naples. They made it exactly like you did except that they added a beef bullion cube to the sauce pan. It's one of my all time favorite dishes. I use way more garlic though. My son made it when he wanted to impress his future wife. :0)

I just finished eating it, but I did deviate and used tagliatelle as I was out of Spagetti, and it still was fantastic. Can't wait to get so good quality Spagetti and use that, as tagliatelle pasta eats up all of the sauce. Quality pasta and quality of ingredients is a big factor here.

This is a great recipe. When I make it, I cook the pasta for 2 minutes and move it to the sauce where I finish it by slowly adding water until it's al dente. Don't know if it makes a difference but I like the idea of cooking the pasta in the sauce and the added. Also, by cooking the pasta in the sauce, you don't lose any starch, making the pasta super creamy once it's done. Really yummy.
i have cooked your version of agio e olio already many times, and i'm fascinated by this recipe! It's so simple, still so flavorful! Cooked it for my girlfriend, didn't follow the recipe fully, as I didn't have chilli flakes, so I substituted it with good old freshly crushed pepper, and I put parsley before serving. Had some grated pecorino on the side for those extra flavours. It was an amazing dish, so simple, but so tasty, she loved it too. It goes an extra mile with a glass of red wine, thanks, Vincenzo, really happy I made this dish.

The thin whole slices cook to sweetness fastest in the slowly simmering oil, and looks nicer with the coarse chopped Italian parsley, which also has the slightly fresh acid contrast. With so few ingredients, every aspect of them is amplified as much as possible, like when and where salt and chili added. LOVE this dish, thank you!

Here in Toronto we have a flourishing Portuguese community and I have to say their olive oil is EVERYTHING I personally look for; grassy notes no bitterness which means no-one was messing about with it .. also found one Greek source I truly trust here. Were I living in Europe things would be different. I also have to mention here that the soil in Italy and probably still in the south of France produces tomatoes that bear no relationship with what we eat in North America; at my laziest because I do make my own marinara I would buy Rao's anything. Or Molisano imported. I can remember eating a panini on a train from Firenza to Trieste and the flavour stayed with me for decades. Where do you live in France? I lived all over the place; Aix, Paris, Lyon, worked in Strasbourg ... also the Vaudois region of Switzerland; Geneva, Lausanne etc. I would love to retire ANYWHERE in Europe. My family came from a varied European background and Canada has been good to us but now I would like to go back.

I was in Tokyo and happened to eat the best Naples style pizzas I've ever had unknowingly at a restaurant called seirinkan and they also made a puttanesca pasta which was more of an alio e olio with anchovies, capers, baby tomato's, parsle but he didn't use any crushed tomato sauce. I was blown away as we have a lot of amazing Italian food in Australia but this was far superior to anything I'd ever eaten all made by a Japanese man who had perfected and made it his life mission to deliver these umami flavors to the public. Your recipe reminded me a bit of that so now I'll have to experiment and try recreate what he cooked 👏

I do the anchovies also. They add the extra umami to the dish. I undercook by one minute for the pasta and reserve pasta water for the fry cooking. Totally agree with your cooking flavors and style. Molto buono.

So I made this recipe for lunch. Although I didn’t have some of the ingredients that was instructed. I just used whatever I had in the fridge & pantry. No old bread or Breadcrumbs, I used crushed croutons. No Spaghetti, I used bucatini No Parsley, I used Italian sweet basil Same, Same but different, Right?! It still turned out delicious! But for sure next time I will use the exact recipe. Thank you Vincenzo ❤

Today I made spaghetti with shrimp, scallops and peas. Fry the garlic in olive oil and butter. Add scallops, season with salt, & pepper, parsley, oregano and red pepper flakes. Finish with shrimp and peas. Dad ate it all. Yummy.

XDchocolatelover at home we use cilantro with the stems at all. And it also gives it a beautiful flavor. It's fun to work with different spices.

Sounds delicious, but I advise you not to use butter, since the main ingredient is oil, together with garlic! 😋

Luke, this is a brilliant pasta dish, simple and tasty. Next time when you do it, try to use thinner pasta like capellini or spaghettini instead of spaghetti. In my opinion it's even better. Vincenzo might agree as well. Great channel!!!

I grew up with friends whose family came from Naples. They made it exactly like you did except that they added a beef bullion cube to the sauce pan. It's one of my all time favorite dishes. I use way more garlic though. My son made it when he wanted to impress his future wife. :0)

I just finished eating it, but I did deviate and used tagliatelle as I was out of Spagetti, and it still was fantastic.
Can't wait to get so good quality Spagetti and use that, as tagliatelle pasta eats up all of the sauce. Quality pasta and quality of ingredients is a big factor here.

My mom puts in chopped walnuts in olio oul. It's delicious! I love the taste of the garlic after it cooks. It gets nice and sweet so I do slice it.

This is a great recipe. When I make it, I cook the pasta for 2 minutes and move it to the sauce where I finish it by slowly adding water until it's al dente. Don't know if it makes a difference but I like the idea of cooking the pasta in the sauce and the added. Also, by cooking the pasta in the sauce, you don't lose any starch, making the pasta super creamy once it's done. Really yummy.

I'm still working on perfectionate it, playing around with amount of garlic, different sizes of cut garlic, amount of parsley etc. But specially the anchovies lift this plate so much up!

Cooked it for my girlfriend, didn't follow the recipe fully, as I didn't have chilli flakes, so I substituted it with good old freshly crushed pepper, and I put parsley before serving. Had some grated pecorino on the side for those extra flavours. It was an amazing dish, so simple, but so tasty, she loved it too. It goes an extra mile with a glass of red wine, thanks, Vincenzo, really happy I made this dish.

Here in Toronto we have a flourishing Portuguese community and I have to say their olive oil is EVERYTHING I personally look for; grassy notes no bitterness which means no-one was messing about with it .. also found one Greek source I truly trust here. Were I living in Europe things would be different. I also have to mention here that the soil in Italy and probably still in the south of France produces tomatoes that bear no relationship with what we eat in North America; at my laziest because I do make my own marinara I would buy Rao's anything. Or Molisano imported. I can remember eating a panini on a train from Firenza to Trieste and the flavour stayed with me for decades. Where do you live in France? I lived all over the place; Aix, Paris, Lyon, worked in Strasbourg ... also the Vaudois region of Switzerland; Geneva, Lausanne etc. I would love to retire ANYWHERE in Europe. My family came from a varied European background and Canada has been good to us but now I would like to go back.

I was in Tokyo and happened to eat the best Naples style pizzas I've ever had unknowingly at a restaurant called seirinkan and they also made a puttanesca pasta which was more of an alio e olio with anchovies, capers, baby tomato's, parsle but he didn't use any crushed tomato sauce. I was blown away as we have a lot of amazing Italian food in Australia but this was far superior to anything I'd ever eaten all made by a Japanese man who had perfected and made it his life mission to deliver these umami flavors to the public. Your recipe reminded me a bit of that so now I'll have to experiment and try recreate what he cooked 👏

I do the anchovies also. They add the extra umami to the dish. I undercook by one minute for the pasta and reserve pasta water for the fry cooking. Totally agree with your cooking flavors and style. Molto buono.

So I made this recipe for lunch. Although I didn’t have some of the ingredients that was instructed. I just used whatever I had in the fridge & pantry.
No old bread or Breadcrumbs, I used crushed croutons.
No Spaghetti, I used bucatini
No Parsley, I used Italian sweet basil
Same, Same but different, Right?!

Today I made spaghetti with shrimp, scallops and peas. Fry the garlic in olive oil and butter. Add scallops, season with salt, & pepper, parsley, oregano and red pepper flakes. Finish with shrimp and peas. Dad ate it all. Yummy.
