    Hi Chef, will the fish balls freeze well? This would be a nice thing to stock up in the freezer. Do I freeze after blanching? Tnx po.😊

      Premium is the fish balls you find in shabu shabu places where they use all fish meat and very little flour and starch. They do not shrink in size because they have no fillers.

    I think it’s easier if you put it in the piping bag and just squeeze it into the simmering water.

      I did think about that but you can not made a round shape with a piping bag. Anyway, thank you for the suggestion.

      @@ChefRoseofCaroandMarieCebu I assume u may not know ma'am apologise bcoz the seller was just a cheap seller located in lapu2x poblacion where he sells to night classes. His pungko2x vege balls has good flavor in it. It reminds me when I was in highschool. He sells a piso per pc. The balls quiet hard outside and soft inside. Very delish dip into vinegar w/some other lumpya etc. No matter how I tried making it now for snacks ,I just can't. It has flavor that's missing and I thought maybe one day you can make one if u know otherwise.. I always love Ur own ideas and some traditional recipes they are always good

    Hi Chef! I became allergic to patis as I grew older. May I know what would replace the fish sauce in this recipe? Thank you.

      So sorry to heat that. You can use soy sauce or salt. Patis gives an unami flavor which soy sauce and salt do not have. Addition of magic sarap with the salt or soy sauce would help.
