Stuffed Crispy Chicken Drumsticks!

    Ingredients:
    6 chicken drumsticks
    3 potatoes
    60 g bacon
    Few sprigs chives
    1/2 tsp salt
    1 tsp smoked paprika
    1/4 tsp pepper
    150 g mozzarella
    5 eggs
    80 g flour
    120 g breadcrumbs
    1 liter sunflower oil
    Instructions:
    Boil the chicken drumsticks for about 30 minutes. Remove the skin and gristle, and separate and chop the meat. Clean the bones from the drumsticks well. Cut the potatoes into large pieces and boil them. Puree them in a large bowl. Add the chicken meat to them. Fry and cut the bacon. Add it to the potatoes. Finely chop the chives and add them to the mixture along with the salt, smoked paprika, black pepper, 1 egg and grated mozzarella. Knead the mixture well. Divide it into 6 equal parts. On top of each chicken bone, shape the mixture into a big drumsticks with your hands. Then roll the drumstick in flour, in beaten eggs, breadcrumbs, again in eggs and again in breadcrumbs. Fry in hot oil at 160C/320F for about 3 minutes until golden, turning the drumstick a few times using tongs. Put it in kitchen paper to absorb the excess fat.
