You have to convert the hair strands into meshes first AND THEN join them (Select the strands, right click, convert>mesh) Basically what's happening is you're joining the curves that make up the strands and applying the same circle curve (the curves that give the strands shape) to them. By converting the strands into meshes first you're applying the shape (essentially locking it) MAKE SURE YOU'RE HAPPY WITH THE HAIR FIRST THOUGH! BECAUSE IT WILL NO LONGER BE AS EASY TO EDIT THE HAIR!! Hope this helped :)
