    i made the Italian ones (3 times already) and they are excellent! i blended the fresh garlic with the wet ingredients in my Nutribullett, and i made my own oat flour using the NutriBullet too. Also, i just used enough foil to cover the sausage. i HIGHLY recommend this recipe, and i'll be trying out the chorizo soon.

      Can you use Ready Brek as it is made of powdered oats? Ready Brek is a brand of breakfast cereals.

      @@pinklady7184 i just googled Ready Brek, and i'm pretty sure it would work. You might want to add it to the wet ingredients and run it through the blender.

    I made a hybrid of this in my stand mixer... I am beyond emotional! Better than any store bought vegan sausage!
    Mine used...
    Dry:
    Oat flour, flaxseed, pea protein isolate, sunflower seeds and whole wheat flour blended, chilli flakes, garlic powder, nori sheet, corn flour, Plus 1 cup vw gluten.
    Seasonings
    All purpose, parsley, salt, basil, yeast flakes, chives, black pepper,
    Wet:
    Tomato+onion+garlic reduction, fine chopped onion, honey, apple cider vinegar, coconut oil, little water, BBQ sauce, soy sauce

    I recently had a vegetarian sausage with onion and paprika and chili peppers made from gluten-free corn flour.
    after everything is mixed well I put it with the sausage filler in a vegetarian sausage casing (edible) 23mm.
    I'm an old-fashioned butcher and I didn't want to know anything about vegan, but I tried it anyway and I have to say it's delicious, I'm going to do this more often and add it to my sausage assortment.

      Ingredients
      Seitan Wet Ingredients
      1/4 tsp liquid smoke
      1 tbsp low sodium soy sauce
      1/2 cup vegetable broth
      Seitan Dry Ingredients
      1 tbsp nutritional yeast
      3/4 cup vital wheat gluten flour
      1/4 cup oat flour
      1/2 cup vegetable Broth
      Chorizo Spice Mix
      1 garlic clove minced
      1 tsp smoked paprika
      1 tsp ancho chile powder or chili powder
      1/2 tsp salt
      1/2 tsp dried oregano
      1/4 tsp ground black pepper
      1/8 tsp ground cumin
      1/8 tsp ground coriander
      1 tsp apple cider vinegar
      1 tsp taco seasoning
      1/4 tsp cayenne pepper
      Italian Spice Mix
      1/2 tsp red wine vinegar
      1/2 tsp salt
      1/4 tsp ground black pepper
      1 tsp dried parsley
      1/2 tsp garlic powder
      1/2 tsp onion powder
      1/2 tsp Brown sugar
      1/2 tsp Dried basil
      1/2 tsp Paprika
      1/4 tsp crushed red pepper flakes
      1/8 tsp ground fennel seed
      1/8 tsp dried oregano
      1/8 tsp dried thyme
      Instructions
      Instructions
      Make the seitan base for each sausage flavor separately.
      Add all wet seitan ingredients into a large mixing bowl and whisk together.
      Also, add in the dry seitan ingredients and whisk until a dough starts to form. Knead using your hands for 4 minutes. No more, no less for the perfect texture.
      Roll dough out into a long log. This may require a bit of squeezing in order to stretch out. Seitan dough can be a bit tough.
      Cut the log into 4 even smaller pieces and roll each piece into sausage shape logs.
      Roll each sausage piece in plastic wrap tightly and then roll that into aluminum foil. Twist the end like a candy wrapper and steam all for 1 hour.
      Remove wrapping and use as you wish. Store in the fridge for up to 7 days.
      Notes
      The base of this recipe is for one sausage flavor. If you would like to make both sausage flavors. Make 2 of the seitan dough mixture.

    Can't wait to try! Do you need the plastic though? Heating up single use plastic this way would definitely put micro plastics in your food.

      I'm pretty sure any flour will do, as for the nutritional yeast it is used because it has a nice cheesy flavour and a pleasing consistency but you can definitely skip it or replace with some finely ground nuts

    Such great recipe! I made both. The second recipe I added extra hot thai chili powder because I am a spicy eater, after steaming....I let it cooled and grilled them on my Ninja grill. OH SO YUMMY. We had it with grilled peppers and onions on toasted italian subs. Thank you Rose. Love you!

    These look really good! I look forward to giving them a try. I am wondering though, if one did not care about them being a traditional sausage shape, could we do without the plastic wrap and foil? We are a single use plastic free home, and I avoid aluminum foil because it is bad for our health, even though I realise it is not touching the food itself, we just do not buy it. I do use vegan “wax” cloth wraps and parchment paper, would those work ok do you think? Have you ever tried that type of option? Thanks for your help and the recipes, I have subscribed to your channel just from this recipe...the chorizo sausages look amazing and I think would be lush on pizza. I will also try some spicy Italian sausage spices in some as my meat eating hubby is willing to give up meat if I find things to replace his favourites that he likes the taste of. I would say he is 90% Vegan, so I just need a few more things to get him all the way there.

      I'm not them but this is basically seitan, so you can shape it as you wish and will still work fine! Since this has to be steamed I don't think parchment or wax wrapers would work, I think parchment will melt/break and with the other one the wax can easily melt, while that may not affect the food on itself, it will potentially ruin the wraper for future use and maybe change the flavor

      I use parchment paper first in contact with the sausage followed by aluminium foil to keep it wrapped tightly

    I wonder 💭 if there is something else you can wrap them in? Plastic and aluminum are NOT the best the point of being vegan in my case is healthy that’s not healthy. Any ideas what else can be use like parchment paper?
