I make my own water for all my pour-over coffees... I use distilled water and Lotus Drops. For my espresso machine I've always used 1 gallon of distilled water mixed with 1/2 package of Third Wave Water.

1/2 Holy Water - 1 gallon of distilled water : 0.239g magnesium+chloride and .08g Baking Soda

.08 grams baking soda? Seriously? What kind of scale? The least amount my scale shows is 0.1 grams, and I would not trust that.
