Where are your motumotu or dough boys? My Mum taught me to cook the riwai, pumpkin and kamokamo in a separate pot so they don't break up into slush. When adding the puha or watercress do so on the boil or greens will sour lift some of the meat out, place greens into the pot and put meat back in on top so greens get submerged *Never had carrots in a boilup - it works though

BillGoudy Glad you are trying some real New Zealand food. It's what i grew up on, so am quite lucky to be in a area where it's free to gather. If i was in the city i would have to pay for it and you never know where it comes from. :) One day we shall meet :)
After all the Christmas festive food I had to watch this to bring it all back, yes I need this food again. Last boil up I had was 7 months ago. Living in the city I'm not as lucky as you guys I have to look and buy cost for everything in your pot $100
chor chor is the flat prickly as puha you use a knife to cut these ones because they are flat when you slide your knife under the leaves and cut the stalk close to the ground that bit is the tastiest I've been rubbing that type of puha since I was a teen apparently I has the hands for it and I'm a wahine
my mum always told us it was a type of thistle or weed & google says puha: is the leaves of the sowthistle used as a vegetable, when my parents took us puha picking if they couldn't find much in the orchards or in paddocks, they would take us to places where there were dirt mounds or dirt areas that had not long been turned mum said it was cleaner because most places are sprayed because council class it as weed hope this helps ;)
Try my spicy edition added with diced onion some garlic ginger and marrocan seasoning, and if you some then chuck some cherry tomatoes in right at the end so 5hey don't get to crushed, it' tasted really good you're got to try it to understand what im taking about lol.

I get most of my puha around the sand dunes where the rich fullas live

The meat you begun with. was it just pork bones? and also did you just add a couple of sausages on top with the vegies?
I normally use pork chops, more meat and a nice piece of fat too. Love sausages with a boil up, on top of the veges yep

Normally boil till veges are cooked, not on high but boiling temp
