Hello and welcome to Week #2 of my NO SPEND Pantry Challenge! I have been following the wildfires in Los Angeles and thought I would include an American Red Cross Link in case you wanted to donate to help out. My thoughts are with all those affected by this horrible disaster 🧡

Also i mix the puree with water, and make flatbreads. Kind of like making pancakes. But, slightly thinner batter. No eggs are needed when using lentils.

I make crackers with lentil puree. I mix 1.5 cups cooked lentils,1.5 c cooked rice, 2 c water, and half cup flour . Oh and one tsp salt. I sprinkle seeds on most of them before baking.i used to spread on parchment lined baking sheet. But now use macaron pans.

I have lots of friends and family in California I lived in LA county for 45 years it truly is sad to seem the area so devastated. I moved 8 years ago to Tennessee just because I was tired of the rat race and needed to slow down a bit and my kids needed a yard which I couldn't afford in Cali. And my kids get to live down the street from there grandmother so it worked out for the best but I am keeping California in my prayers. Great meals Jessica!

Some homesteaders told me the best way to cook chicken ( or rabbit) in the crockpot is to layer chicken pieces in the pot, beat a block (8 oz) of cream cheese with a packet of dry buttermilk salad dressing mix and a little milk, pour that over the chicken, and cook on low all day. Delicious!

That first recipe reminded me of a simple yet amazing recipe that my husband came up with about 20 years ago.
He would gently fry diced onion in a bit of butter, add a clove or two of diced garlic once the onions softened a bit, and became slightly translucent, then he added a handful of half moon slices of zucchini. He cooked them until they were about half done and added an equal amount of fresh tomato chunks, salt, and pepper. Then he cooked it until the tomatoes softened. Then he dished it up and sprinkled grated Parmesan on top.
Sometimes, we ate it on its own as an appetizer. Other times, he would serve it over pasta or slices of bread he had fried in butter, much like we do with grilled cheese sandwiches.
