I've known for many years that lime is used as a tenderizing agent for cooking meat in Mexican and Cuban cuisines. But it never occurred to me to use it for my grilled ribeyes and strips. Thanks for the tip, definitely gonna try this.
I have been using Kent's lime juice and red river ranch steak prep technique for a couple of years now. It's the only way I prep my steaks. I cook them on a big green egg. With prime filets I smoke them at 275 first to an internal temp of 105, then convert the BGE to a grill by removing the ceramic plate and grill them at 400 for 4 min each side. Thank you so much for this video. My husband just bought some beautiful really expensive rib eyes and I dont want to ruin the precious meat. I really want him to be happy and this helps me so very much. You guys are fabulous and I always enjoy your videos. Take good care
Kent, I have to say thank you for answering two questions i have had that have been hiding me back in grilling: why do i have to let meat rest after grilling it & how can I tell when my meat hits the right level of doneness without overcooking it. I'm one of those guys who likely won't do something if I'm not told why it should be done that way. So, again, thank you. Because of your video on grilling chicken, I finally was able to grill my best chicken breasts ever. And now I can't wait to try my hand at some steaks.
My favorite cut is the T-Bone , even with a gas grill that is on it's last legs , last night I cooked the perfect Angus Kroger T-Bone . I let it set on the counter for 2 hours then hit it with a generous amount of coarse sea salt and cracked black pepper . It was windy and 50 degrees out so I figured right between two burners of a 4 burner grill 20 years old and rusted out on high . Slapped that $14.00 slab down for 7 minutes ,turned him over and did an additional 5 minutes ,the large side was very tender but the smaller side was like the best prime rib you ever tasted . I was pleased !
That med/rare looked about as perfect as you can get! I'm a chef at a retirement community in California and once a month I grill the old folks some nice rib eyes. Thanks for the video.
Best explanation of and what to look for in marbling I've ever heard. I've been buying steaks for 30-years and done well for the most part except for the time I picked up Mexican, yep...Mexican, steaks from a local grocer that I won't ever go back to for anything other than their chicken salad b/c they have a great one...but I just cannot trust them ever again. I had no idea anyone ever bought Mexican steaks...You are in America, for God sakes.

Man oh man. God bless you and your family!!!! Thank you for the nonstop positivity and amazing cooking
I do the same thing but I use oil , salt and pepper, and I season the night before and leave it in the fridge until 1 hour before I cook it. it's delicious this way also. I loved your commercial too Cowboy Kent. You always make me laugh out loud.
Thanks Sarah for watching
I just love the videos and education you and Shan put out; thanks guys!!
Thank you for watching
I love your videos, have some old cast iron my wife bought me off Ebay mostly Griswald and cook mostly with that. Just moved where I have access to a lot of dead oak so will most likely be cooking with that. Would appreciate a video oh cooking with wood.keep up the good work!
Your videos are so informative and entertaining, I tell anyone that will listen about your videos! ❤️
Thanks for watching and for sharing
I've had people tell me poking the meat doesn't work but i've seen people do it and come out with a perfect rareness every time, that little finger trick you showed is great, I tried it out the other night and boy it does work. I'll do it a few more times and i bet I'll master it right quick. As always Kent you're the best, God Bless Ya.
First try, made two fabulous T-bone steaks. Great teacher!
Glad you enjoyed it!
That was the first time I've heard of that method for judging how done the steak is. I will have to remember that. Thanks for the advice.
Glad to help
My mouth is watering now for 13 minutes and no steak around at 2 am! Darn it Kent!
Thank you so much for this video. My husband just bought some beautiful really expensive rib eyes and I dont want to ruin the precious meat. I really want him to be happy and this helps me so very much. You guys are fabulous and I always enjoy your videos. Take good care
Thank you for the grilling lesson. It’s been a hit/miss when I grill & I never knew why. Appreciate you & Shannon. ♥️♥️
I'm salivating,,, Thanks Kent. Hi Shannon. and the Puppies..
Thanks so much and I will pass on the howdy
Thanks for explaining marbling in steaks.
Simple humble life on a ranch. Shieee I'd love to visit.
I love 'em rare too ! My steak of choice is the filet and very rare! God Bless you as well
"Cut them two fingers off" is exactly how I feel. Well said sir. I had a good laugh on that one.
Thanks for watching
I love me a good steak and I’m always happy to learn how to cook it better. Who better to learn from than Kent Rollins?
Thanks so much for taking time to watch
Cowboy Kent Rollins Always a pleasure, never a chore.
That med/rare looked about as perfect as you can get! I'm a chef at a retirement community in California and once a month I grill the old folks some nice rib eyes. Thanks for the video.
Thanks for watching and for what you do for them
Great job at explaining how to cook that king of steaks. Thanks, Tony
Thank you Tony for watching
Best explanation of and what to look for in marbling I've ever heard. I've been buying steaks for 30-years and done well for the most part except for the time I picked up Mexican, yep...Mexican, steaks from a local grocer that I won't ever go back to for anything other than their chicken salad b/c they have a great one...but I just cannot trust them ever again.
I had no idea anyone ever bought Mexican steaks...You are in America, for God sakes.
Just tried this method on a couple of middle of the road steaks. Lime juice and seasoning. FANTASTIC!!! Thanks Kent 👍👍
Jolly Tank no, it just helped tenderize.
Love your teleprompter!
Thanks Larry
Tis guy is the best on UA-cam!!!
Man this is better than anything on network TV.. you are a true talent Cowboy Kent
