+Kuchenrolle That's the whole purpose of the macarons is to have the "feet". Every single macaron recipe calls for the eggs to be beaten to stiff peaks.
No. They're supposed to have feet, but the feet shouldn't separate from the body of the shell (they shouldn't crack) as that means that the macaron is hollow inside, which comes from overbeating the egg whites.
I think the secret to the feet is to make sure they have dried enough before putting them in the oven. Drying the "shield" (the tops) makes sure they don't expand during baking and the macaron has no choice but to expand upwards like a mushroom when baking making the little frill on the sides.
I've made macarons a grand total of two times and they come off very nicely from the silicone mats. I've never tried the parchment. I suggest you google "macarons troubleshooting" and you will find a lot of helpful information.
I'm French and I can tell you that a macaron is not made of coconut, it's made of almond powder. It always makes me smile to notice that some random "french-food" are absolutly not french.. Like french fries, which are more belgian than french or even french braids which we call african braids =) By the way, they look delicious, super pretty and yummy ^^

Thanks for the suggestion, I may do that some day. My recipe is nothing special, if you google "buttercream frosting" you will get the recipe you need, it is essentially just butter, powdered sugar, vanilla and some liquid like milk or water.
They taste like a plain meringue cookie, very sweet. A lot of flavour comes from the filling you use. Give them a try, this recipe is small and relatively inexpensive even if they don't turn out that great :0
They are by nature very sweet. I would suggest altering the filling to something less sweet with a bitter edge (like very dark chocolate) or something fairly bland.

I bought the bags on ebay from Hong Kong. They are really inexpensive and they work well for things like this. They are pretty thin and don't hold up to stiffer frostings.

The inside doesn't cook solid, that is why they are crunchy on the outside and chewy on the inside. You just want the caps to not jiggle around when you touch them. I`ve never baked these on parchment before, do you allow them to cool completely before removal. Try googling ``macarons troubleshooting`` and you are certain to get a lot of really good advice. This is only the second time I have made them, so I am no expert.

You're supposed to sift both the almond flour/ground almonds and the powdered sugar so you get any lumps. And macarons are almond based, so you can't substitute it. If you don't have any almond flour, you can put raw almonds in a food processor and sift it afterwards.

Did you know If you toasted 1/4 of the almond meal it will give the macarons a really nice flavour ^_^ soooo good for caramel ones

another good is when you’re mixing, if you lift the spatula and you can make a figure 8 without it breaking, you’re good to go!
