    The rainbow themed recipes just don't stop!!
    I love the way the colors blend together on these.
    On an irrelevant note, I have a habit of informing people about the difference between macaron and macaroon.

      Good chance you could probably find some video footage of lava flowing somewhere on this amazing invention called the internet. If you need help with learning how to do an internet search let me know, it really is easy. There is a great program called Google search :)

    **NUT FREE VERSION**
    I wanted to make these but I was allergic to almonds, I searched the web and no nut-free recipes looked similar to the real thing, so I made up my own! I ground up pumpkin seeds until they resembled the consistency of the almond flower and I did the rest how you usually would, THEY WERE DELICIOUS! My friend said that they even tasted better than when made with almond flower! ~~For anyone allergic to almonds~~ ENJOY :)

    Did you know If you toasted 1/4 of the almond meal it will give the macarons a really nice flavour ^_^ soooo good for caramel ones

    I love macarons. I made some already: chocolate shell with chocolate ganache filling, pink shells with white chocolate and rasberry ganache and finally beige shells with maple cream filling. BUT... never done these beautiful rainbow macarons. Thank you for sharing. I will make some for sure and will test them with my co-workers! They will love it!

    THANK YOU for talking about differences between macaroons and macarons. They are VERY different, but a lot people just use them interchangeably. These are super cute! I'll have to try them!

    The beauty of this method is that the food colour is very little and only on the surface of the macarons and in my opinion doesn't affect taste. I know what you mean though,sometimes if you use too much colour you can taste it.

      Yeah!!!!!! It's not like we have ton of movies with simulated lava flowing in them or documentaries showing lava or youtube to search up videos of it....
      Oh no wait we do have all those easily accessible ressources. But obviously, you should go near a volcano, it's your only solution for making macarons. ¯\_(ツ)_/¯

      another good is when you’re mixing, if you lift the spatula and you can make a figure 8 without it breaking, you’re good to go!

    These look fantastic. What a wonderful tip to "paint" the inside of the piping bag! Macarons have been on my baking bucket list for a while now and you make it look so easy that I think I'll finally give them a shot next weekend!

      You can use any filling you want. Nutella is not "runny" whatsoever, and is very popular as a filling in macarons. I use nutella all the time in my macarons

    I buy it ground, and you are correct, it is relatively expensive. I don't have a proper food mill to grind something that fine, but all you need is blanched almonds.

    Last night my husband brought me 10 pieces of macaroons, it was my first time to eat it! I was so surprise not because it was baked by a famous baker in Europe, but they were so delicious and I want to try baking too! This video is awesome! ^_^

    That colouring technique is pretty phenomenal, thanks for that idea.
    One thing though: You can see the feet separate from the shells (meaning the macarons are hollow) and that happens because you overbeat the eggs whites. You don't want the peeks to be that stiff to start with.

      +Kuchenrolle That's the whole purpose of the macarons is to have the "feet". Every single macaron recipe calls for the eggs to be beaten to stiff peaks.

      No. They're supposed to have feet, but the feet shouldn't separate from the body of the shell (they shouldn't crack) as that means that the macaron is hollow inside, which comes from overbeating the egg whites.

    I think the secret to the feet is to make sure they have dried enough before putting them in the oven. Drying the "shield" (the tops) makes sure they don't expand during baking and the macaron has no choice but to expand upwards like a mushroom when baking making the little frill on the sides.

    I've made macarons a grand total of two times and they come off very nicely from the silicone mats. I've never tried the parchment. I suggest you google "macarons troubleshooting" and you will find a lot of helpful information.

    I'm French and I can tell you that a macaron is not made of coconut, it's made of almond powder.
    It always makes me smile to notice that some random "french-food" are absolutly not french.. Like french fries, which are more belgian than french or even french braids which we call african braids =)
    By the way, they look delicious, super pretty and yummy ^^

    Thanks for the suggestion, I may do that some day. My recipe is nothing special, if you google "buttercream frosting" you will get the recipe you need, it is essentially just butter, powdered sugar, vanilla and some liquid like milk or water.

    They taste like a plain meringue cookie, very sweet. A lot of flavour comes from the filling you use.
    Give them a try, this recipe is small and relatively inexpensive even if they don't turn out that great :0

    It is sold in the baking section of my local grocery store, you can make your own by grinding blanched almonds (without the brown skin on them)

    In the USA Martha Stewart (the one from tv) has a whole line of kitchen/bed/bath products. The silicone mats were a gift from a friend from the US.

    They are by nature very sweet. I would suggest altering the filling to something less sweet with a bitter edge (like very dark chocolate) or something fairly bland.

    one cup is the volume that 240ml of water takes up, so the weight will vary on the substance measured in the cup

    I bought the bags on ebay from Hong Kong. They are really inexpensive and they work well for things like this. They are pretty thin and don't hold up to stiffer frostings.

    I am allergic to nuts, I found that using ground pumpkin seeds works just fine. My friend tried both and said the one with the pumpkin tasted even better !!!

    The inside doesn't cook solid, that is why they are crunchy on the outside and chewy on the inside. You just want the caps to not jiggle around when you touch them. I`ve never baked these on parchment before, do you allow them to cool completely before removal. Try googling ``macarons troubleshooting`` and you are certain to get a lot of really good advice. This is only the second time I have made them, so I am no expert.

    Thanks so much again for this video. I love rainbows for the idea of HOPE like after a storm, and for other things. I had requested a rainbow meringue recipe, but I can use this technique for the rainbows & various shapes. From the comments, I see various color combos re/white/blue, delicious flavors White choco raspberry ganache, nutella. I can add colorful flavorful yellow lemon zest, neon orange zest/tangerine, blueberry, peach, purple grape, green kiwi/key lime/pistachio, hot pink strawberry

    You're supposed to sift both the almond flour/ground almonds and the powdered sugar so you get any lumps. And macarons are almond based, so you can't substitute it. If you don't have any almond flour, you can put raw almonds in a food processor and sift it afterwards.
