- Let's make a delicious shrimp gumbo filled with nutritious okra. Okra is a vegetable that folks either love or hate. Okra deserves more love and was the original thickener enslaved African used to make gumbo. Considering that okra is an African vegetable, this makes sense. Flour used as a thickener ( roux) was a direct influence from the French. If you would like to use a roux in this recipe feel free. I will link my gumbo recipe that has a roux. However, on the daily I eat gumbo thickened with okra or file, as I moderate my flour consumption.

Gumbo Recipe w/ Dry Roux Instructions: • New Orleans Style Chic...
Ingredients
1 lb small shrimp
2 cup tomatos, chopped
8 oz cajun sausage
12 oz okra + 1 cup okra
2 tsp worstichire sauce
thyme
1 tbsp salt free cajun seasoning
1/2 tsp mixed herbs ( thyme, oregano, basil)
1 onion
1 bell pepper
2 stalk celery
1 piece fat back
1 bay leaf
1 shrimp bouillon cube
1 1/2 tsp chicken bouillon
1/2 tsp seafood magic
1/4 tsp creole seasoning
Season to taste! Especially watch the salt as the liquid will cook down alot. Don't season again until the gumbo is done.

This is a Creole gumbo. My family is Creole and this resembles our gumbo without a roux. The roux is more a Cajun gumbo thing. I love that you said that the original gumbos didn’t have a roux because that is true and people have lost knowledge of our origins. Not to knock the new stuff, roux gumbo is delicious as well. I researched that the roux was introduced by a flour company, hoping to increase sales, in the 1920’s. Their slogan was something like what is gumbo without a roux from white lily. I think that’s the flour company. Wonderful!! Wonderful!
thanks for the history about the introduction of roux by a flour company. thats interesting! the original gumbo being made w/out makes sense b/c wheat was not common in Africa at that time. so it would not have been a first choice when enslaved africans were brought to america.

I haven't been able to find any link, where cajuns contributed anything notable to gumbo.
Gumbo is creole.
The cajuns just learned to make it, from the creole. Then culturally, they were given recognition for it, bypassing Haitin's influence on practically everything we consider to be "cajun"
I don’t like roux in my gumbo, personally so it makes me feel better that gumbo was originally made without it.

I’m a Cajun and you’re right about some flipping over the tomatoes. Tomatoes in gumbo is sacrilege here. I grew up without them but added them myself in later years. I like the flavor and the acid helps cuts the slime from the okra.
The only other thing that you did differently than I would have is the addition of the bay leaf and leaving the vegetables chunky. We would normally cook all the vegetables (including the okra) until they break apart completely.
Sometimes, as Cajuns, we watch these videos in utterly bemused horror at what some folks think gumbo is. I must say, though, that all in all you really did do a great job!
i agree that the tomatoes pair well with okra. I have done it where I add the okra first and it cooks down completey. but i realized I liked them to still be whole. however, since they are from frozen and I also pan fried them first, they are incredibly soft.

Yes, they get so soft that they disintegrate as soon as you put them in your mouth and press them with your tongue. No chewing required… LOL
@googies ~ I too am cajun and was taught a slightly different way of making okra gumbo. Frying down the sliced okra first (with a lil vinegar to cut the slime) is how I make mine. Once it disintegrates that forms the ‘roux’. Then add whatever you buy or have on hand: seafood or chicken & sausage or all three, season well & add water or stock (& of course tomatoes😬 if it suits your taste [haha]). Now, I like her suggestion of buying whole okra then slicing. Might try that. I’ve seen some folk add sliced okra to Roux gumbo and it’s good as well. Definitely add file’ once ‘cooked’ but never while cooking and never to okra gumbo. To each their own. Good eating 🥣
@@jackiebessard7988 Yes, I grew up eating it the way you describe using vinegar to cut the slime. Nothing wrong with it that way. I just like the tomatoes… and yes, the okra becomes a thicker in place of a roux. Filé goes on when it’s in the bowl and never in okra gumbo, as you said.

Rue for sure is authentic. But also it can be made w/out it. I typically choose not to use too much rue b/c I want to keep the flour content down. But rue taste great lol

This is different. I’m use to making a roux. It comes out thicker. This looks easier though. Might try it because it looks really good. Thanks for sharing.

traditionally, gumbo file would be used in the winter when okra wasnt available as a thickner. however, if you like the flavor you can feel free to add it to your bowl when serving. i use file when i make a roux based gumbo just for flavor, but it does thicken as well

Gumbo looks good but no Africans created gumbo . Gullahgeechee are the orginators of orkra gumbo 😋 and they were indigenous to america they are considered the sea island creek people . Our ancestors didn't start off as slaves . Respect to ancestors and their culture and land 🪶 🏹
So you are saying that the Gullah geechee were not enslaved Africans? That’s interesting. Considering that okra is an African vegetable that was not in America until transatlantic slavery, I find that an interesting perspective.
