I made this wine to the recipe using the bananas for body. Started in late August. I racked the wine at the end of September as it continued to ferment until then. Stored it in a dark cupboard and bottled today. Jan 4th. The wine hasn't cleared, still cloudy but smells an tastes amazing. Disappointed that it's cloudy but can't wait to drink it. It's the best flavour out of the 3 wines I made. Never made wines before but will definitely use this recipe again, next time using raisins instead of bananas.
I have learned so much the past couple weeks. I tried my cider tonight I was quite happy! I could taste ALCOHOL! and a decent bit I think :P the best part is I used 100% ingredients from the fridge and pantry

I just made this today! I did a few things differently in that I used a muslin bag for all the lemon/lime and banana pieces, a different yeast too (I used red star premeir cuvee). Also I used a smidge more sugar at 4 3/4cups and my OG came out to 1.092 so I'm looking at 12-13%abv if it ferments to dry. I know you like 11% but I'm hoping the slightly higher abv will still be ok. Thank you for the recipe!
I made this during the first Lockdown. I cooked the lemons too long and my whine tasted like Gin and Tonic. Quite bitter. But when I left it for 3 months in the fridge it became a sherry. LOL
More sugar doesn’t equate to higher alcohol content. It’s more dependent on the yeast. If you step feed you can make it go higher. So you’d add a couple teaspoons on sugar every week until it stops fizzing. It can be a little volatile ttough so don’t make a mess.
I'm going to be using a 20ltr demijohn to make my first batch of lemon wine. What sort of ratios should I be working with for that size bottle? I'm assuming your bottle used in the video is 10ltrs? If so, I guess I'd just need to double your recipe i.e. 24 lemons, 2 limes, 4 bananas, 2kg sugar. Is that correct? Also, how much water did you use to simmer the ingredients? It seems you must have used quite a bit in that your demijohn is quite full, so I'm assuming several kettles full of water? Lastly, when do you add the sugar? To the simmering mixture, or directly into the demijohn prior to the rest of the strained liquid? Thanks for the help, but these points are not quite clear in your video. Cheers!

@@qwertyajb An acquired taste at present!... Definitely one to mature for a while longer and see how it is then. It'd be fine to add a citrus twang to cooking right now but hopefully it'll take on an extra dimension with age... Hopefully. 🤔🤨🥴😉

How much time did it take to ferment fully and how was the end result ?

If you don’t have a juicer, jam a fork into the 1/2 lemon, and squeeze while rotating the fork.

Looks good. A wine at even 8-9% would be enough for a 'session' wine though.

Since its a 1 gallon batch, this one, I would more say add with 5 for 20 l. I will try that🥰. Wish you luck🥰!

Braid that beard and coat it in Bentonite clay(wet) let it dry then wash it out. Your beard will be soft pliable and full of minerals.
