  • I tried Cooking Red Pumpkin & Dried Prawns Verdur using earthenware it turned out to be very delicious. Verdur is derived from the Portuguese word ‘verduras’ meaning vegetables. Adding Dried Prawns adds flavour to this dish. I’m sure you’ll want to try out the Red Pumpkin & Dried Prawns Verdur. Here is the process.
    Recipe: • Pumpkin & Dried Prawns...
    Ingredients & Quantity (For Coconut milk)
    Freshly Grated Coconut - 1 whole
    Coriander seeds - 2 tbsp
    Cumin seeds - 1/2 tsp
    Black peppercorns - 8 nos
    Cloves - 5 nos
    Turmeric powder - 1/2 tsp
    Green chilies - 2 nos
    Garlic cloves - 10 cloves
    Rice (washed) - 2 tbsp
    Water as needed
    For main preparation
    Onions (Chopped) - 3 nos
    Tomatoes (chopped) - 2 nos
    Green chili (slited) - 1 no
    Vegetable oil - 3 tbsp
    Dried prawns (cleaned, soaked & drained) - 250 gms
    Salt - 1 tsp
    Sugar - 1 tsp
    Method
    1) In this recipe I've used a whole red pumpkin which I've cut into 2-3 wedges and than into big chunks.
    2) Similarly I've used a whole coconut which I've grated.
    3) Take dried prawns Trim its head and tail and soak them in water for few mins and drain them.
    4) Add coconut and all other ingredients in the mixer jar along with water to extract the thick coconut milk.
    After extract the thick milk add the residue back in the jar along with water and grind. Remove the thin coconut milk.
    Note:- I used some rice while grinding because it will give thick consistency to the final dish.
    5) Next, Heat oil in a vessel, add chopped onions and slited chili, saute till onion turns translucent.
    6) Now, add chopped tomatoes and soaked dried prawns, give a good stir. Add the pumpkin pieces. Give a good stir.
    7) Add the thin coconut milk and cook it for 10 mins by covering the lid.
    8) Add the thick coconut milk, season with salt & sugar mix well and cook for 15 mins.
