If you want to learn how to cook mushrooms like a chef, or don’t know how to cook them properly, you’re not alone! Most people I see, struggle when making mushrooms and I notice the same mistakes being made constantly. I see people salting in the beginning, or washing them first, and adding ingredients in the totally wrong order. Mushrooms consist of 80-90% water and will do all the work FOR YOU in a DRY pan if you let them (let your food speak to you). No oil, butter, or salt is even needed until the very last step.
Cooking mushrooms in a dry pan will give you the most beautiful outcome (in my opinion), texture, and color as well. The mushrooms go through a process of getting color at first, releasing all of their water, followed by the water evaporating completely and getting golden again. At the end we finish them off with butter, salt, and aromatics of choice for the perfect bite! INGREDIENTS
½ lb sliced cremini mushrooms, or any (300 grams)
1 tablespoon salted or unsalted butter
sprinkle of salt at the end if using unsalted butter
aromatics like thyme

I was taught to add salt in the beginning to encourage water to be released.
My grandmother dried the mushrooms and salt in a very hot dry pan. In a separate heated sauce pan she added EVOO rosemary, smashed but whole garlic cloves, salt flakes and white pepper brown the garlic then add unsalted butter so it melts but, doesn't burn. She then removes rosemary and garlic and pours this sauce over the mushrooms.
She served this to a guest our uncle brought one dinner. He turned out to be a chef and was so impressed he said he would put this on the menu.
He invited us for dinner and introduced my grandmother to the patrons as the creator of the Champignon Madame Maria they applauded she was very overwhelmed and grateful.
She was an amazing lady.
Ms. Maria's Mushrooms are my favorite food.

Hey i legit did this the other day by mistake 😂 i forgot to add butter at the start and the pan started smoking then the water came out. After it dried i added butter and they were lovely 😋

Does it change the texture of mushrooms? I want to like them but don’t like the texture most of the time. Only time I’ve liked them was at a restaurant and they were cooked in some kind of sauce and served over a steak

@@dpc3324yeah it really does! I hate "wet" mushrooms (chase me with canned mushrooms!), but when made like this, the texture is different. Worth a try!

For less cooking time, you can also put them on a paper towel, sprinkle generously with salt, let sit for bout 15 min or more and pat all the water that comes out with more paper towel. It was a fun experiment I read about and really works well! I was very surprised how much water the salt drew out 😮😊
I actually found this method myself just from experimenting and I felt so proud of myself once I found out chefs do it this way

Do not crowd the pan. Use a larger pan and fewer mushrooms otherwise they kinda steam instead of brown.

I'm gonna be making a shrimp white pasta today and I wanted to use mushrooms because I love mushrooms but I don't know how to cook them so this helped😂
Am mushroom lover, too. Happy to share my quick mushroom in garlic dish: cut heads, mince mushroom stems, sweat minced (lots of) garlic in olive oil, toss in mushroom heads and stems +- 2-3 minutes (just cooked enough), a tbsp of white wine. Top with chopped parley, serve with a good slice of bread, also to wipe off sauce with😋.

Also. Use a larger pan or fewer mushrooms. Overcrowding only makes the mushrooms steam. Hope that helps.

I make them exactly this way. Mushrooms are like a sponge so if you add oil in the beginning the mushrooms will soak it up, so dry saute until cooked and add the oil at the end to finish them.
Super basic it’s like boiling an egg 😂 people who do it any other way have never been to school or anything I guess 😂🤦🏻♂️
@@alexanderandersson9476 I wouldn't go that far, its not something taught in any other kind of school but a cooking school. And its not intuitive, in fact its counterintuitive.
@alexanderandersson9476 Arrogant, most people learn to cook at home with grandparents, and mothers. I learnt first champignons than later butter, or Olive oil. They taste better this way but also the other way. If they sook up olive oil it’s okay for me.
I cook them this way. So creamy and delicious by themselves or in pasta with grilled butterfly chicken breasts.

Just as important: use a large pan and don't put too many mushrooms in it. You still need to see plenty of the bottom just like in the video. En let it get frickin hot before you add the mushrooms.

I also think that you can add a bit of salt at the beginning to draw the water out faster.
@@jks3190 you absolutely can. There's more than one way to do everything. The dry pan and salt at the end gives a better texture, so they're restaurant quality.

@@jks3190no problem! I think you should do it both ways at the same time and taste the difference. The ones in the dry pan will have a firm, but succulent, meat-like texture w a nice crisp on the outside and golden color. The quick cooked ones will be rubbery or overcooked.

I’ve been making it this way ever since I vent to farmers market and one of vendors sold mushrooms, she recommended making it this way, so much better.
LOL mushrooms are my FAVOURITE food to fry, so when I started this video I very arrogantly thought it wasnt going to be referring to me... but oh my you got me with the dry cooking first! That makes so much sense and you've officially changed my life 😂

Hey everyone, this is an excellent way to use mushrooms you get marked down because they are starting to "turn".
Dry saute them until they are pretty dry and they will last a few days longer in the fridge.

This is why it's important to slice the mushrooms thinly if you want them on a pizza. You don't want the pizza to be soggy and the mushrooms tastes so much better when the water leaves them.
I’ve always loved mushrooms. 🍄 Mostly because of my nan, I don’t know how she cooked them (she died 12 years ago) but I’ve never tasted mushrooms as nice as the way she cooked them. 😞
Since becoming vegetarian 18 years ago, I eat mushrooms most days. I hate saying ‘meat alternative’ as I won’t eat anything that looks or tastes like meat (quorn, seitan etc.) but I guess they replace it in a way. They really go with anything.
