I love bean soup and when I make it, I throw in fresh spinach leaves at the end. Once they start to wilt, I take it off the heat and it's ready to serve. That way I get my protein and vegetables in one bowl.
Try Swiss chard too.

First of all, I love the new flamenco guitar in your intro. Secondly, I have all the ingredients to make the soup and it's going to be tonight's dinner with some homemade crusty bread and a side salad. Often when I make these soups or stews, I put a chiffonade of kale, dandelion, escarole or other dark greens or parsley on top and the heat of the soup wilts them just enough. Every dish I have made from your videos has been excellent. Thank you for teaching the world how to make simple, delicious and healthy recipes that will sustain us and the planet.

Now I am convinced that there must be an ancient link between Indian and Spanish food for sure. So much similarities in the ingredients, in the process of cooking and so many vegetarian dishes! Loved this soup! Will surely give a try.

Look at the history of flamenco. It has its roots in India because the gitanos brought it over, so they likely did the same with food as well 😊
I'm not sure why this is a profound insight. Both countries are on the Mediterranean which has a very consistent climate longitudinally from Spain through the Middle East. The Mediterranean Sea was the interstate highway of Europe for centuries. It allowed a vast amount of travel and therefore mingling of cultures.

My great Grandfather was born in Spain. My Granny used to use Garbanzo beans instead of white beans. Also she would go to Ybor city in Tampa Florida and buy Spanish Chorizos to cook in the soup. She's make a huge pot of it. Now I need to make some. LOL

I've been watching your channel for a little while, but hadn't made any of your recipes until tonight. I made this soup tonight after work. So quick and easy, and so flavorful! Just made it, it's delicious. The smoked paprika makes it taste like bean and bacon soup but nicer. I diced a small potato from my garden and put it in the middle as I hadn't time to make bread today. I made exactly as you demonstrated, the potato excepting. Thank you for this recipe.

I made this only that I cooked the beans and I didn't use canned beans. It was supposed to be a side-dish. The main was risotto. It was so delicious that by the time risotto came, my guests were quite full. They had to doggy-bag the risotto. :)))

Another winner of a dish, however I added diced chorizo to pan to render out the fat before adding onions and garlic. Set aside chorizo and added at end.
The awesome thing about this soup? It's vegan. I will definitely be trying this out with a side of sourdough baguettes.

the huge amount of starch in the beans today was quite astonishing. here is always the same brand of beans used but I've never seen so much starch in the strainer in the previous videos.
Could you substitute the white beans for Garbanzo beans? Love your recipes by the way. Great for vegans.
Of course! Beans are fundamentally the same..(White beans, Haricot beans)....just be sure to prepare them as suggested prior to this final cooking. Enjoy!

Looks great Albert. Can you substitute the vegetable broth recipe for a veg stock cube instead and omit the bay leaf if you can't find one? How much of an impact will it have on flavour of the dish? Gracias.
Yes you can use water with a veg stock cube, the bay leaf adds a subtle bitterness to make the soup feel not so heavy, but you can go without it :) much love

Could you use Hungarian Sweet paprika and skip the saffron to do this dish?
You could use Hungarian paprika and I'm sure it would taste great. The thing is that 'pimenton' (smoked Spanish paprika) has such a quintessential Spanish flavour profile and is used so extensively in Spanish cooking which makes this dish taste 'Spanish.' It comes in three forms - sweet, hot and in-between. The Hungarian variety would work just fine but it wouldn't taste Spanish.
I would jazz are a guess that with the amount of garlic you eat, you rarely get sick.
I another note, would garbanzo beans work in this recipe also?
Hi Nanci: Well, for me, if a recipe calls for "three cloves of garlic"...that means five to me. (Minimum)
Garbanzo beans....why not... any bean almost will work here....some require slightly different preparation prior to final cooking.
Red Kidney beans in the UK were a favorite of mine....used in a dozen & one different recipes.
Can't get them where I currently live (Which puzzles me...Weird) But I can get black beans....which serve fine, I guess.
But all manner of beans.... go for it! Beans-Glorious-Beans...

Can this recipe be doubled and frozen? I am not always well enough to cook. I would like to have servings in the freezer. I know the taste and texture will not be as good. I cannot use saffron, so that will not be a problem. Thank you.
Hi JD: I sympathise with your wanting to cook..... but not always well enough to do so. Stay strong.
Well, in my experience there are some rules as regards freezing soups: Cream-based soups do not work. They separate.
Also, soups with solid potato in them...as the potato fails on reheating & collapses. Not a nice result.
Not sure if that is true if the potato has already "dissolved" into the soup (as a thickener for example) prior to freezing....? Need to try.
But I have frozen many soups...Pea & Ham for example, that have been delicious 12 months later. Even those with higher meat content.
But my advice: Avoid creamy soups!

Yes this soup actually freezes well, you will need to add more veggie broth when reheating, you can replace the saffron for ground turmeric :) stay well!
