This recipe came so highly requested- thanks to all of you who sent it to me. This video was fun to make, one of my big hopes is that those of you who don’t have access to store-bought seitan can enjoy it on your own with the simplest ingredients (and a little patience) 😉
Next time, keep the seitan to cool in a bowl with the broth, in the fridge overnight. It will be firmer, tastier and you can shred it small for stir-fry noodles or bigger to make vegan nuggets

I live in Thailand. They don't have seitan here than I have seen, so I am excited to try making this!

To those who are thinking about making this, instead of adding vegetable broth, add in vegan chicken boullion, it'll give this seitan more of a chickenish flavour
I thought the same thing. You can maybe add the Trader Joe's vegan chicken seasoning...if it's available in your area

Premade seitan is wildly expensive, the fact it's this easy to make is a godsend.
Honestly, the effort that you have to put into it isn't worth it. You get very little yield, you sprinkle your whole kitchen with starch and the starch water isn't even really reusable since it's so diluted that it takes disproportionate amounts of energy to put it back into usable form. And even the very cheapest chicken parts have 4 times the flavor. It's a party trick, nothing more.

@@multibasking This isn't a replacement for chicken by any stretch of the imagination. It does look very appetizing in the pan, but even compared with other vegan meat replacements it frankly tastes disgusting.
And you're frying plant-based carbohydrates, so it has lots of carcinogenic acrylamide (which you can taste btw).
Plus washing out the starch removes most of the lysine, which is the one essential amino acid that vegans already get too little of.
I was really curious and that's why I tried it. i'm hugely disappointed (playing around with gluten strings is fun though).
@@james64ibm i don’t think anyone thought a wrung our gluten ball was nutritious but thanks for that tidbit of info! also it obviously isn’t disgusting to MANY people who season it to their standards lol. it’s not supposed to be a replacement to anything. just interesting food science that happens to be edible

I use lamb and chops seasoning on everything! I just love the flavour, but it's still vegan :)

in the 1930’s seitan was eaten during the depression. It was so called “end of the month loaf” because people would eat it when money was running out at the end of the month. Just use a stand mixer wth dough hook.

Most of the "tik tok" video followers don't know that you actually need to enhance the texture by letting it rest after cooking! After the simmering let it cool down and store in the fridge at least 8 hours. You'll be amazed about the difference!
Can you just boil it and let it rest, and then fry it up afterwards?
@@david82633 You shouldn't boil seitan, but simmer it to achieve this type of mock meat. Don't go over 90 degrees Celsius. Otherwise you'll risk ending up with a sponge. 😊

As one russian chef who I follow said - gloves are not meant to protect the product from bacterias as every professional who works in kitchen washes his hands so many times it's even hard to imagine. You only put gloves when you need to protect your hands, for example while working with acid marinades, food that colours skin, etc.

Seems like a lot of people who are mostly familiar with food service are in, say, a fast food restaurant. They assume any sort of cooking always requires gloves. But gloves are necessary for public health. When really at home cooking simply requires, well-cleaned hands, close-cut nails, and fresh towel to wipe things down. People just need to learn how to develop clean cooking habits without gloves.
There's a place in india called jodhpur. A traditional dish us made same way by washing the flour in water for about 8 hours. What left behind(gluten) is boiled in water. This makes "chakki" and dish prepared by chakki is called "chakki ki subji". It is very delicious.

This is what vietnamese and chinese eat at the end of the month or the start of the month, also during july and august, ghost festival and Buddha festival and new year, vegan meat has been around for ages before it became a trend!

Some tips for anyone making this: Try kneading in some sage and poultry seasoning to add extra flavor. Also, a brand called Better Than Bouillon makes a great Vegetarian "No-Chicken" broth base that tastes great with this. And adding a few teaspoons of vinegar to the broth gives it a nice kick, too. My family loves it like that and we eat this all the time (it's a pretty great affordable protein source as well, which is nice when money's tight).
How is it a protein source?
@@r.s6387 You should look up seitan nutrition facts. When you wash the flour, you're removing the wheat starch that contains most of the carbohydrates, and what's left is almost entirely protein. Eating a whole 100 grams of this actually has more protein than an equal amount of most cuts of beef, less carbs than a single slice of bread, and zero cholesterol. It's really pretty impressive.
I’m not vegan, but watching Merle’s excitement over these recipes and how creative and weird they can get really inspires me to try some of these! I’d love to try this❤️

@@metalycat9135 it's not hard at all. You just need to not eat certain foods. but it can also lead to nutrient deficiencies and health issues when you eat that way long term (5years plus). For some, poor health effects start showing up even earlier because they already have certain deficiencies before starting the vegan diet. Many "vegans" who have stuck with it for a while are not actually vegan, and eat products made with egg or butter ocassionally. Meanwhile, many vegans who were 100% dedicated and never slipped up end up being sick. Some people can actually be healthy on a vegan diet long term but it just depends on your genetics. How long have you been 100% vegan for?

Gluten sensitivity is still a thing. I wish I could eat gluten food though, gluten free pasta is just not the same :(((((

Yeah educated people know that the only reason a person should have a gluten free diet is if you are celiac or gluten intolerant. Actually most gluten free substitutes are higher in fat and calories to enhance the flavor and add moisture. So essentially being gluten free will not help you lose weight like many people believe.

The price of seitan per oz in the States is just outrageously expensive. In Asia (East Asia especially), seitan is way cheaper than meat, even in some cases cheaper than chicken.
Do you mean pre-made seitan? For my area at least you can get one big bag of wheat gluten for no more than $15 that makes 12-15 meals.

Whenever I make seitan, it ends up tasting like chicken flavored instant ramen. Like it’s close, and it doesn’t taste bad, but it’s not what I want. The recipes are lies. Still an amazing source of plant based protein!

You could do a vegan chicken broth or bullion, and from everything I’ve seen the texture and flavor are even better the next day.

I’ve been making seitan for years! There’s so many different methods of making and cooking it but I’ve always just used vital wheat gluten instead of flour so you don’t have to wash out the starch

You could boil them after tearing the dough into bite sized chunks for about 45 min to 1 hour or bake them but you would need more water cause the oven will dry it out
There are tons of recipes online of different ways to make seitan and different flavors

Excellent video! Might I respectively suggest that you use bread flour, if available. The higher gluten content can lead to a more pleasing appearance when the seitan is shredded. Also, instead of water might I suggest using a prepared broth made from Better Than Bouillon No Chicken Base...? This will help to jumpstart the seasoning process of the finished product.

Don’t think so, the gluten is what forms the strings and the only thing that stays when washed

I am lazy though so I use Vital Wheat Gluten - flour with the starches already washed away.
Mix the dry VWG with spices of choice then add liquid of choice and kneed.
Then wrap tightly and simmer to cook through (in an oversized container as it will grow while cooking but relaxes when cooled). Or, if you want chunks or shapes then tear or shape peices as desired then simmer in stock / broth or cook over steam bath.
Then slice and cook with preferred method
I tried this and it tasted so good, you have to season it well.
it's very popular food item for vegetarian curry in India,Bangladesh ...we used them to make curry similar to paneer curry...it gives chicken fibe..delicious
We use Seitan all the time 😍😍 it’s also really lovely as beef alternative in Asian dishes

I made a Buffalo garlic parm one and put it on some buns and seasoned it up really well put avocado, tomatoes etc and it was actually pretty good. I’m not a vegan or vegetarian at all but I was actually impressed. I don’t think I rinsed it enough because some pieces were still dough like but otherwise it was very good

Love seitan. I use Vital Wheat Gluten which makes the whole process quick and easy, especially with a food processor.

I once did it because it was a hard month and wanted to eat some kind of meat but no money, but I had all the ingredients to do this and it has a nice flavour... so this also help no vegans!!!

Ingredients:
Flour - 400 g (2½ cups)
Water - 1 cup
Salt
Pepper
Paprika
Garlic powder
Onion powder
Vegetable broth
Soy sauce
Directions:
1. Combine flour and water
2. Knead for 5-10 minutes (if you poke your finger into the dough, it should bounce back)
3. Rest the dough for an hour
4. Wash the dough with water until all the starch is removed
5. Season the dough with the spices
6. Rest the dough for an hour
7. Twist and tie the dough into a knot
8. Fry it on the pan until golden brown
9. Add vegetable broth and soy sauce
10. Let it simmer on low for 45 minutes

I love how seitan has been a thing but all of a sudden someone posts a recipe on Tik Tok and then it becomes “a viral trend” like it’s new or something 🤷🏽♀️😂
I'm definitely going to try to do this, because it works well for me that it doesn't taste like chicken. I don't actually like the taste of chicken.

There have been many times where vital wheat gluten and seitan has gotten me through lean times.
so if i had a bag of pure vital wheat gluten to hand, i'd just hydrate it (maybe with a stock ooo) until it forms a similar sized lump and then start the recipe at 3:23, then do two rounds of rest+knots to accommodate for the lack of bread dough kneading? does that sound about right?
